All Grain Brewing / mash calculator

Hi all!
I recently brewed a few batches using an excel worksheet, a "mash calculator" if you will.
only need to enter the data concerning batch size, temperatures of grain, desired mash temp, etc. It calculates the water usage and loss from evaporation and tubing loss, also calculate adjuncts and step mash, etc.
In a word: an incredible tool!
one drawback: the one I have isn't accurate!!!
Damn!
Any of you have an accurate and reliable worksheet download link?

Yeast and Fermentation / stuck fermentation ;(

Hi all!
I recently brewed a cocoa stout. problem is attenuation is too low : 55%
any insights? here are the specs:
OG: 1.062
FG: 1.028
1st fermentation : 2 weeks at 70F, 2nd : 1 week at 70F. attenuation didn't change from racking.
yeast used : WLP036 dusseldorf (altbier) close to the expiring date, though well kept in fridge.
2 litres starter 18 hours prior to pitching for a 40L batch, which perhaps wasn't vigorous enough - though the actual fermentation seemed to be quick and sufficiently vigorous.
oxygenation of the wort was just as usual.
mash procedures: too hot at first (80 celcius) and brought back to 67 celcius with the addition of cold water after 15 minutes. perhaps denatured too many enzymes (to break down long chain sugars), thus not enough fermentables and too many unfermentables in the wort? though the conversion with the iodine test was OK after 90 minutes of mashing...

Kegging and Bottling / carbonation for dunkelweizen

Hi all!
Dunkelweizen ready to bubblely!
I've took a look at    http://www.tastybrew.com/calculators/carbonation.html
and it recommends about 28 PSI for this style (at 40F). Isn't it gonna be too fizzy in the glassy?

Kegging and Bottling / relief valve problem!

Hi all!
today is kegging again! beautiful dunkelweizen which seems very promising...if I can get it to the end line!
after testing the seal on the kegs I realized that there is a leak on one of the keg's safety valve... anybody knows if it is OK to let it stand like that for about a week in a fridge before I can get replacement parts and fix the problem?

HI all!
Anybody knows the difference between a CO2 and a nitrogen regulator? I actually realized that mine is a nitro one but I'm using it with CO2 gas. Could that explain a carbonation problem? (see post entitled "fizz problem")

Hi all! I'm new to this site and I recently brewed an all-grain english pale ale. Everything went cool and tasted good but the beer has been sitting in the corny's for 2 weeks with 13PSI marked on the CO2 gage and the brew is still flat...
Can't satisfy my urge before figuring out what's happening with thy bubbles! Help!!! ???
