Classifieds / 70 pound Excellante Mechanical Scale

I purchased this scale about a year ago but no longer need it. I'd like to get $50. for it. If you're interested, let me know and we can work out the details. I can ship.

Any recommendations on a water profile for this style?
The Dortmund profile seems pretty minerally. But, the style guidelines do describe "minerally water with high levels of sulfates, carbonates and chlorides"

Question for those of you using the Tilt - does a heavy krausen cause problems for the Tilt? The chico yeast strains tend to throw up a pretty thick head of krausen that sometimes never falls.

A few months ago I started transferring my fermenting beer into a purged keg with 3-4 to go before reaching a predicted FG. I re-pitch my harvested yeast 8-10 times. Since by transferring before FG is reached and harvesting the yeast that has dropped out of suspension at that point, I am selecting yeast that has flocculated early. My questions: am I likely to see any change in behavior from the yeast I am harvesting early, ie: yeast dropping out of suspension earlier and earlier ? Or is this something that would only be an issue with many more re-pitches.

Other Fermentables / Melomel

I put a melomel together about 3.5 weeks ago. It is still fermenting based on gravity checks over the past few days. The OG was 1.0158 (calculated based on amount of honey and total volumn), I did not include the sugar contribution of 15 pounds of frozen fruit (blueberries, strawberries, blackberries, sweet & sour cherries).
The yeast I used was 71B. At this point, I'm assuming the yeast is bumping up against its maximim alcohol content.
It is fermenting at around 60 degrees ambiant.
As of yesterday, I am an 1.038.
I have to be away for the next month and wondering if I should:
1. Rack to another carboy before I leave,
2. Remove the fruit before I leave and just leave it in the primary fermenter,
3. Do nothing and tend to it when I get back at the end of April.

Equipment and Software / Proane regulator problem?

I was planning on brewing this AM.
However, when I started the propane burner I got a very low flame. Like the tank was almost our of gas.
The tank did have gas in it but I switched to a full tank.
Now the burner won't lite at all.
I disconnected the regulator from the hose that goes to the burner and then attached the regulator to the tank.
Turned on the gas, no gas is coming out of the regulator.
I assume that's not normal.
Can I assume that the regulator is bad?
Weird, it worked OK two weeks ago.

My Barley Crusher has stopped feeding grain again and I've decided not to have it refurbished again since I only get about 2 years out of it before it needs to be redone (I put 350-400 pounds of grain through it per year).

I've narrowed the search down to either a JSP Maltmill or a 2 roller Monster mill.

Most mills seem to do a pretty good job of milling the grain so I'm looking at longevity. What are the experiences of those of you with either of these mills and the time (or the amount of grain) before the rollers need to be re-knurled or other repairs are needed?

Kegging and Bottling / Closed transfer and dry hopping in the keg

Some questions for those of you who are doing closed transfers and who also dry hop in the keg.
I understand the keg purging process of filling the keg with sanitizer and pushing it out with CO2.
Do you then open the keg to put the dry hops in?
Do you "purge" the hops somehow? I've read/heard that the hops bring a substantial amount of O2 to the finished beer.
Finally, with the keg closed while transferring beer from primary, do you fill the keg by weight? Or, how do you know when the keg is full?

Equipment and Software / MW102 pH meter issue

Lately, when checking mash pH I've noticed that my meter's reading was .2-.3 lower than the Brunwater estimate. After checking a few other things, I used the meter to check the pH of the 4.01 and 7.01 calibration solutions.

The meter reads the 7.01 correctly but the reading on the 4.01 solution is 3.75.
The probe is less than a year old, always stored in the storage solution.
The calibration solutions are both new bottles.
I've noticed that the last few times I have calibrated the meter that it takes much longer to lock onto the 4.01 reading than the 7.01.

This is a first for me with this meter. Do I need to replace the probe or is there something else going on?

I checked the Danby website and there is no mention of them.
I guess nobody but homebrewers care about the interior dimensions.

Hop Growing / Winter storage of hops planted in container

My daughter recently purchased a house that had what I believe were Cascade hops growing in a five gallon bucket.
Her house is located in Eastern Maine and we have some pretty cold weather here in the winter.
What is the best way to store them (the rhizomes) over the winter?
