The Pub / Spirit distillation

I had someone tell me they thought that distilling spirits was just made legal as long as it was in small amounts. I didn't think so so I did a little internet research but all the info I found was outdated. I'm gonna guess it's still illegal  ;D

All Grain Brewing / FG too low again!

One thing I've been able to do consistently since my AG excursion began 1 1/2 years ago is miss my FG on the low side. :(  It seems that every time my fermentation is done, I find my self several points below my target. This time, I started at 1.084 one week ago and today it's already down to 1.016. My FG should be 1.021. I dry hopped today so should I crash it to stop fermentation or let it go? Any ideas as to why I'm missing my FG?

I bought a TDS meter so I could test the RO water I bought to make sure it was as pure (at least as far as TDS) as it should be. My tap water was 481. Is there any correlation between total dissolved solids and water hardness?

I was asking an employee at my LHBS about local water and brewing IPA's. He said that it's important to remove chlorine and iron in order to brew a good IPA and that I could achieve both of these tasks by using a carbon filter. However, when I started researching carbon filters, the info I read stated that
they're not very good at removing iron but very effective at removing chlorine. Which is correct?

I got a recipe from a local brewery and I'm wondering how to scale it down appropriately. They do 15bbl batches so the amounts I got were for that size. Is there anything funky to consider (without getting too wonky) when scaling down to a 5 gallon batch?

I'm getting ready to make an 80 Schilling that calls for Lyle's. I can get everything I need at my LHBS except that. I know I can order it online but I've read that a 50/50 blend of light and dark Karo syrup is a reasonable substitute. Sound right?

I contemplating buying some nylon paint strainers to use instead of the muslin grain bags. If I happen to buy the kind without a drawstring, would it be a problem to use zip ties to close the tops when used during the boil? I not concerned that they'll melt but maybe some off-flavors?

Is it okay to submerge my hands in PBW while cleaning when mixed according to the label? There's a warning on the side about skin contact, but there's also one on StarSan and I heard a rep from FiveStar say StarSan is completely safe when mixed appropriately. Thanks

So I made this copper sparge arm with lots of fittings and solder that looks really good but is probably way too over-thought to be effective ;D An any rate, what would be a good way to clean it (internally) to remove the flux hiding inside? Would PBW do the trick or is there a better way to clean the inside?

As I learn more about brewing, I'd like to start to making my own recipes. How can I get the best idea of what flavor a particular grain will give me? I've heard of chewing on the grain, steeping and making a 'tea' etc...what works best?
