Yeast and Fermentation / Sourdough Bread - Wild Yeast

I came across this method of creating a wild yeast starter for sourdough bread using red cabbage (or grapes) (  Does anyone have a sense how this would work in brewing (flavor, amount for a 5 gallon batch)?
