Beer Recipes / Opinions on new IPA recipe?

Hey guys,

Sorry for posting a ton of recipes but I am getting a running start into the world of brewing.  I have brewed for the past 5 weeks straight and want to keep it going at this pace as long as possible.  I already have a DFH 90 Minute Clone this coming week followed by a Hoppy Brown Ale, Hoppy Red Ale, and hopefully this IPA if it gets good responses.  So after trying my Summertime Wheat IPA I like the idea of using Honey Malt in this IPA.  I also still have a lot of my Amarillo and Columbus (Tomahawk) hops and then 2oz of Simcoe hops.  Well here is the recipe:


5LB Light/Pale Malt Extract Syrup
3LB Briess Dry Extra Malt Light Extract
8OZ Corn Sugar (Dextrose)
6OZ Gambrinus Honey Malt

boil 60 mins 1.0 Columbus (Tomahawk) pellet 13.1
boil 15 mins 0.75 Amarillo pellet 9.2
boil 15 mins 0.25 Columbus (Tomahawk) pellet 13.1
boil 10 mins 0.75 Amarillo pellet 9.2
boil 10 mins 0.25Columbus (Tomahawk) pellet 13.1
boil 5 mins 0.25 Amarillo pellet 9.2
boil 5 mins 0.25 Columbus (Tomahawk) pellet 13.1
boil 5 mins 0.5 Simcoe pellet   13.0

Whirlfloc at 5 Minutes

I will then ferment with Safale US-05.

This will end up being 69.8 IBU's with a OG of 1.067 and FG of 1.018 so 6.5% alcohol.

Beer Recipes / Leftover Grains and Lots of Hops!! IPA recipe ideas?

Hey guys,

I am trying to figure out my next brew which will most likely be after my Pliny the Elder kit and before my DFH 90 Minute Clone.  I just ordered my malt extract but I had a lot of grains left over so I decided not to order any specialty grains. I am trying to formulate a good reciped but I wanted to come in here and find out what you guys would do with the ingredients I have.  I am looking for a really good and hoppy IPA. 
Here are the ingredients I currently have:

5OZ Simcoe Pellet Hops
21.5OZ Amarillo Pellet Hops
28OZ Columbus

1LB Crystal 15L
8OZ CaraVienne Malt
12OZ Honey Malt
5OZ Crystal 40L
5OZ Carapils Malt
8OZ Chocolate Malt
8OZ Crystal 60L

5LBS Light LME
3LBS Briess Extra Light DME

Any opinions or recipes would be greatly appreciated!!

Beer Recipes / Dogfish Head 90 Minute IPA attempt?

Hey guys,

I want to do a DFH 90 Minute clone. I am using this as a basis http://www.homebrewtalk.com/f69/dogfish-head-90-minute-clone-260675/. In this recipes thread it has the extract instructions but I could not get the amber malt. I read in the recipe thread that I can use Victory Malt and Crystal 60L to replace the Amber Malt. I currently have 8OZ and 8OZ of each. Do you guys think this will work alright or should I change the amounts. This is my recipe from Hopville http://hopville.com/recipe/1328050/imperial-ipa-recipes/dogfish-90-minute. I know it will not come out completely the same but I am OK with that.  What would you guys suggest doing.  Any help would be greatly appreciated!!!

8LB 12 OZ Briess Dry Extra Malt Light Extract
1LB Great Western Premium 2-Row Malt
12OZ Corn Sugar (Dextrose) 8OZ Victory Malt
8 Great Western Crystal 60L

Combine all hops and add every 3 minutes throughout the 90 minute boil

3OZ Amarillo
1OZ Simcoe
1OZ Warrior
Dry hop 7 days 2OZ Amarillo
Dry hop 7 days 2OZ Simcoe

Well I brewed my Summertime Wheat IPA on Thursday.  Here is the recipe for those who did not see it in my other thread:

6LBS Briess Bavarian Wheat DME
1LB Briess Extra Pale DME
8OZ Caravienne Malt
4OZ Gambrinus Honey Malt

60 mins 2.5 OZ Amarillo   
boil 60 mins 0.25 OZ Citra   
boil 15 mins 1.5   OZ Amarillo   
boil 15 mins 0.25 OZ Citra   
boil 5 mins   1.5 OZ Amarillo   
boil 5 mins 0.25 Citra   
boil 1 min 1.5 OZ Amarillo
boil 1 min 0.25 OZ Citra   
dry hop 8 days 1.5 Amarillo

IBU's: 86.5

The estimated OG was 1.065 but mine was 1.070 so a little bit higher than expected.  This may have been a result of my 37 Minute steep as my stove is pretty horrible.  Either way I think it will come out great.  I pitched one smack pack of Wyeast American Ale II at 66 degrees.  I know I should have used a started but I did not have any malt extract.  The pack was fully expanded when I opened it up and I had a nice healthy Krausen at 40 hours.  The temperature strip on the fermenter reads right around 63 degrees so I may try and bring it down a little bit but I am happy with where it is now.  I tried the wort that I pulled to test the alcohol and it had a nice bitterness to it.  I am really excited to try out the final product!! Next thursday is my Pliny The Elder Clone!!

Hey Guys,

I am brewing the MoreBeer! Pliny the elder extract clone tomorrow.  Very excited to give this beer a try!  When I ordered it I forgot to get two packs of Wyeast American II yeast.  I don't have the means to make a starter at this point.  I do have an extra Safale US-05 that I could use along with the Wyeast or should I just use the Wyeast?  I will be keeping this in my primary fermenter for 2 weeks and then transferring it to the secondary for dry hopping.  If I use the two yeast packs do I have to worry about blowing the lid off my fermenter?  I could just make a blowoff tube with my siphon tube.  Any help would be greatly appreciated!!
