Homebrew Competitions / Dry Hopped Sour - NHC

I have a 6% dry hopped sour. It doesn't fit into the other sour categories, where should I enter it? Thanks for any advice you can provide. I'm shipping tomorrow.

I'm starting a 10 BBL brewery, and have a few questions about hop contracts.

1. Did you sign a 5 year contract?
2. How big is your brew house, and hop many pounds do you contract per year?
3. By what % did you increase your hop demand each year?

Yeast and Fermentation / Repitching yeast after finings

If I added Biofine in primary, can I still re-pitch the yeast? Will this affect a secondary fermentation? Thanks!

Going Pro / Hop contracts and obtaining hops

I spoke with a rep from Hop Union last week. Breweries are contracting hops thru 2020. The popular IPA hops like Citra, Mosaic, Nelson Sauvin, Amarillo, and Simcoe are mostly contracted thru 2016. How will startup breweries be able to obtain these popular varieties?

I made a cider with wild berries and it picked up some brett character. Is brett acceptable in the fruit cider category, or would it do better in speciality cider ? Thanks
