Extract/Partial Mash Brewing / Well screwed that up

Ok I bottled my nut brown partial mash kit on March 8. At that time my beer was a crystal clear dark brown and had a really nice nutty taste I was shocked how good it was. I just opened one and and was super cloudy and very bitter with a grapefruit after taste. WTH??? The beer has completely changed since putting it in bottles. I followed the bottling instructions to the letter I even got brand new bottles. Everything was sanitized and clean. Is it possible that it just needs to sit longer or is it trashed? I am so frustrated. >:( >:( >:( >:(

So I made the mistake of racking my ale into a secondary fermenter. To late to do anything about that. But I have noticed that all activity has stopped in my air lock over the past few days. Do you guys think I would be safe to bottle at this point or should I test the gravity for a couple consecutive days and make sure that it doesnt change?

This is my first batch in a few years and my OG was 1.060 I had heavy fermentation in 8 hours and it continued for a week. I just racked the beer in a secondary and my gravity is 1.020 that seems like a drastic change to me is this normal?  :o

Yeast and Fermentation / When to use a blow off tube

So when I was taught how to brew I was told after pitching and aeration to put a blow off tube on. But now that I have been reading more about brewing it seems like the standard practice is to put an air lock on and only attach the blow off tube if you need it. What do you all do? Does it matter if I just attach the blow off tube right after pitching? or am I just thinking about this way to much?
