General Homebrew Discussion / Winter/Garage Brewing

I'm looking for a little advice or feedback on brewing in the garage in the winter. 

I live in Minnesota where the winters are long and cold.  My wife and I moved to a new house recently in which I have a nice three car attached garage that is insulated. It is not heated.  I have water and a sink plumbed to the garage with a floor drain for access.  I made the water shutoffs on the inside of the house so that I can drain them after use to avoid freezing.  My brewing system uses propane burners.

My main concern is with condensation buildup from the boil.  In my previous garage, I brewed all winter long and the windows would fog up even with the garage door open.  This new garage is a lot bigger, but I want to avoid any condensation/mold issues.  The new garage does not have any windows, so I would need to brew with the doors open to evacuate CO if it's there. I've toyed with the idea of installing some sort of an industrial vent hood over my brew rig and venting that to the outside, but I would like to avoid that investment if I can. 

Does anyone have any current process/setup that they use to avoid condensation build up in the winter?  I'd hate to have to quit brewing when it gets too cold to brew outside!

My fiancee and I are getting married in September and are going to give away bottles of homebrew as a party favor.  We're going to be giving away two different styles of beer and each attendee will get to pick one bottle.  Does anyone have any recommendations for beer label services or software?  My fiancee is fairly artistic, but we'd like to find a service that's easy to use as we've been fairly busy and only getting busier as the wedding approaches.  Any recommendations (and why) would be appreciated.

My brewing buddy recently tossed out the idea of brewing a blueberry wheat beer.  Does anyone have any recommendations or recipes that they may have used in the past?  I'm thinking something like a blueberry witbier, but also thinking that a blueberry Kolsch would be nice.

Hi everyone,
My fiancee and I have set the date for late September, 2014.  I've always thought it would be fun to brew beer as a party favor for our wedding guests but I'm not sure what the legalities of this would be.  We live in MN and I was hoping to give a way a bottle to each guest that is over 21.  If it isn't feasible, we'll need to find another way to incorporate beer into the wedding.

I've never used spices in my beer and I'd like to make a blonde ale to test out spices.  I'm thinking of adding Grains of Paradise and Coriander to my house blonde ale recipe of 2-row and Crystal 10.  What's the best time to add spices?  Also, is there a general rule of thumb for how much to add?  I found a spreadsheet on BYO that lists generics, but what is everyone using when they brew?

Hi Everyone,
I'm going to brew my second attempt at Helles this weekend and want some feedback on the water I'm using.  For my first Helles (which turned out great) I used Kai's Helles/Pilsner profile for the following:
Ca: 22
Mg: 8
Na: 0
So4: 31
Cl: 39
HC03: 0
Residual Alkalinity: -20

I will be building this with RO water.  The only concern I have is the low Calcium level as I've read that Calcium should be at least 50 ppm for good yeast health.  I had a slight diacetyl problem with my last batch and I want to ensure great yeast performance this time around. I do plan on incorporating a D-rest this time as I didn't on the first batch. Any thoughts would be helpful. 

Kegging and Bottling / Storing/Aging Beer

I recently starting brewing more and more lagers and I'm running into a storage quandry.  I keg all of my beers and counterpressure fill to bottles for parties and competitions.  I want to age some of my bigger beers (doppelbock, dunkel, etc.) to see how the flavors develop over 6 months to a year.  I could keep the beer in kegs but I only have so much cold space. Would bottling the beers to, keep 4-6 of each kind on hand in the fridge, cause them to age differently than they would in the keg?  My main concern is that sediment will accumulate in each bottle and then be roused if I were to enter into any competitions.
