Going Pro / Warlock Brewing Company

Going Pro is exciting and fun, albeit a ton of work and lots on money.  It's been a long strange trip, but I wouldn't trade for anything in the world. 

I'm the founder and president of a startup brewery, Warlock Brewing Company, in Smyrna, Delaware. Our brewery will have a 1bbl pilot system, and a 15bbl brewhouse where we'll brew/package beer in kegs and bottles.  We'll also provide a tasting room for the purchase of pints, flights, growlers and Warlock merchandise. Wood/Casks / Bourbon Barrel Aging

I'd like to share ideas, tips, tricks and information on bourbon or whiskey barrel aging.

I currently have a bourbon barrel that I'm getting ready to rack a RIS into for some extended aging. I plan to age the stout for approximately 180 days. Then back blend it with some fresh stout to the desireable flavor level.

Anyone want to share their experiences or start some discussion related to this aging technique?

I just brewed an Oatmeal stout and plan to add some fresh Kona coffee to the beer. This comes up from time to time, but I thought it would fun to discuss specific tips, techniques or secrets for adding coffee to beer.

What's your method of adding coffee to get the best Java stout?

Perhaps if it's a secret...one wouldn't divulge that information here. ;)

However...I'm planning to brew up a Dopplebock this weekend using the yeast slurry from my Schwarty.

Here's my recipe:

Dominator Dopplebock

All Grain Recipe
Brewer: bluesman
Batch Size: 11.00 gal
Style: Doppelbock ( 5C)
Boil Size: 13.23 gal
Style Guide: BJCP 2008
Color: 20.1 SRM
Bitterness: 23.2 IBUs
Boil Time: 90 min
Est OG: 1.078 (18.4° P)
Mash Profile: Single Infusion,Fly Sparge
ABV: 7.7%

Ingredients:
15 lbs Dark Munich Malt - 10L (9.9 SRM)
15 lbs Vienna Malt (3.5 SRM)
1 lbs Aromatic Malt (26.0 SRM)
1 lbs Melanoiden Malt (20.0 SRM)
8.0 oz Carafa I (319.0 SRM)
6.4 oz Caramunich Malt 2 (60.0 SRM)
6.4 oz Caramunich Malt 3 (150.0 SRM)
1.5 oz Hallertauer [3.9%] - Boil 60 min
0.5 oz Magnum [14.0%] - Boil 60 min
1.0 oz Hallertauer [4.8%] - Boil 20 min
1.00 tsp Irish Moss (Boil 10 min)
German Lager Yeast (White Labs #WLP830)
1.00 tsp Yeast Nutrient
 
This is what I made the last year. I think I want to remove some of the crystal malt and add a touch more Carafa for a darker beer.

What's your trick for this style?

I'm very sad and dismayed to report to everyone that Denny's mother passed away this morning, and he's heading to Phoenix to pay his respects. Denny will be unable to attend the NHC in Philly. He will be sadly missed this week, but he will be in my thoughts. Lets join together here to pay our respects to Denny in his time of sorrow. Please leave a short note to Denny here to show your support and give him your respects.

Sorry to hear about your loss Denny.

Yeast and Fermentation / Post a pic of your Pellicle!

Anyway, I thought it would be cool to see some funk!

I collaborated with a good freind of mine, aka "redbeerman", on a Saison experiment. Here is a photo of a pellicle that formed on one of our batches of Saison that was fermented using WLP565 and WLP650. The recipe includes the use of Tupelo honey and Muscat Grape Juice, along with some bitter dried orange peel and coriander. We used a standard saison recipe base malt formulation, Pils malt, 2 row and wheat malt along with just enough Hallertau (bittering) to balance the malt profile and give a hint of flavor.
