All Grain Brewing / first all grain - IPA recipe critique

Hey so I am thinking of going all grain this summer, and I decided to start making a recipe for a pretty basic IPA, whatcha think?

5 gallon batch
11 lb US 2 row
1 lb Carafoam

1oz Chinook 60min
1.5oz Centennial 10 min
1oz Chinook 5 min
3oz Centennial 1 min
3oz Columbus dry hop (5 days)

Wyeast 1056

EST abv: 6.46%
EST OG: 1.065
EST FG: 1.015
IBU: 72.3

What I am concerned with is having it be too bitter...I LOVE IPAs and hoppy beers, but I don't want to over do it for a basic IPA, I don't want to go into the DIPA category (even though I know I am far from it).

Is the hop schedule okay?


Extract/Partial Mash Brewing / pumpkin ale questions

I am looking to make a pumpkin beer soon, it will be my 2nd bath ever.  The first batch was an all extract, and came out nicely.  I want to do this extract/partial mashing.  From my research online, it looks like I should bake the pumpkin pieces.  So after I boil the can of extract (and add whatever hops/spices I choose or buy) to put the pumpkin in.

Is this the way to go? 

Kegging and Bottling / amount of priming sugar to use

A friend of mine who helped me brew did this part for me when we were doing our first batch of beer.  I'm not sure how much sugar he boiled prior to bottling.  It was an all extract kit (regular 5 gallons).

What is the normal proportion for priming sugar to wort?

Okay, so I just did my first batch (all extract) and tried a bottle (day 10 of bottling).  It was a little watery, and not as carbonated as I would have liked.  Hopefully within a couple days both of those will change for the better.

With colder weather around the corner, I want to do an Oktoberfest beer.  I know that because it is a lager, it has to be climate controlled more (has to be in a colder environment).

How can I do this with lager yeast and simple brewing equipment?

General Homebrew Discussion / when does carbonation occur?

I just did my first batch ever on Friday night, so it is currently fermenting.  In 2 weeks, I will bottle it, then let it sit for another 10-14 days.  Is that when the beer becomes carbonated (in the bottles)?  I know it may seem like a silly questions, but I am very new to this.

Okay so I brewed my first batch tonight, with a simple IPA kit with just the syrupy type extracts from a can.  I sanitized the fermenter tub, boiled the extract stuff, etc etc.  I then poured the boiled extract into the fermenter tub with cold water in it, added the yeast, and covered it with the lid.  THEN, I put the carboy (the valve type contraption that allows CO2 to leave the tub, without letting oxygen get in) ontop of the lid (at the designated hole in the lid).  HOWEVER, I pushed it in a little too far, and the tip of the carboy thing fell into the beer. 

Now, the carboy thing is a little loosey goosey on the lid of the fermenter.  I tried to fix it by adding tape to the sides to help stabilize it.

Being that it's my first batch, I'm not expecting much from it.  Obviously there is know way of knowing how it is going to turn out until it is bottled and everything in 4 weeks.  Is there any tips for the future, or even for what I should be doing for the next 2 weeks, prior to bottling?  Then what to do after bottling?

Any help will be greatly appreciated.  Thank you.
