All Grain Brewing / cold-weather brewing

Livin in Holland, MI & haven't brewed for a while due the crappy weather we've had lately.  I'm an all-grain propane brewer.  Anyone else brew in sub-freezing conditions?  If so, what sort of obstacles should I consider or should I just stop being a pussy and brew?  I'm considering doing some extract beers just to fill my kegs.  Any thoughts?

All Grain Brewing / floating rice hulls

When I add rice hulls in my mash (I will both mix some in with the dry grain, before mashing, and periodically sprinkle a some in the tun while adding the grain) I notice that I always have a bunch floating at the top.  It looks as though I just threw some at the end for good measure.  Anybody else have this?  I don't think they do a whole lotta good there at the top.

Equipment and Software / keg into fermenter

Anybody out there convert a 15gal ss keg into a fermenter?  I've been running the logistics over and over in my head and I think it could work for a nice 10 gal FV, but I'm also wondering if anybody's ever done it with any success.  It'd kinda be designed after a conical, but not quite.  Advice?

so... twice the grains and everything means twice the propane too?  Something I didn't consider.  Good thing I just filled up, but anyone got any input?

Ingredients / root beer foam

Anybody know if there's a certain ingredient used to get that long-lasting rocky, foamy head in a root beer?  I keg-carbed my 1st root beer attempt.  Wondering if bottle-conditioning it would work better (obviously in a plastic 2L)  It tasted great, but the head had no retention. 

I steeped 6 oz of rolled oats hoping to give it a thick, creamy mouthfeel and that would help the head.  Score: zero for zero.

Any thoughts?

Kegging and Bottling / Storing keg-bottled beers

When bottling force-carbed beer from a keg, should I expect problems cellaring any beers?

I don't have a way to keep a "library" of beers chilled.  My keg fridge is @ 32° and doesn't have room for a lot of bottles.  My basement temp varies from season to season; from about 55° in the winter to 72° in the summer.

My concern is the temperature change affecting the beer.  Any thoughts?

Kegging and Bottling / keep cool for carbonation?

I'm looking into getting a kegging system and have been checking out some of the local brewshops where one person told me that I need to keep the beer cold or it will loose its carbonation.  I've never heard of this.  Can anyone verify if this is true?

All Grain Brewing / too effecient?

i heard from a guy who heard from another guy (who prolly heard it from someone else...) that 75% efficiency is what you should shoot for.  anything over that and you start extracting undesirables from the grains.  exactly what those undesirables are was not defined.  i figured that if anyone could verify this, it someone on this forum.  i normally get between 80-85% and i haven't tasted anything undesirable in my beers, but i might not know what to taste for.  any thoughts?

wondering if anyone out there has a dough-in method better than the one i'm employing which is to tip my 5-gal bucket and slowly pour in my grains while stirring so i don't get any air pockets.

i know there's gotta be something better out there.  any tips would be greatly appreciated.  (my back thanks you too!)

i'm looking into growing my home-brewery capacity and want to get into brewing 10-gallon batches.  from what i gather, a 10-gallon cooler or larger will suffice for a mash/lauter tun.  what i really would like are suggestions for the boil kettle.  i want to be able to do a 90 minute boil, comfortably.  what'dy'all think?

it's hard for reg'lar, non-brewing friends to relate to the excitement of having a GREAT brewday (like i had yesterday - 82% efficiency!) with a good fermentation taking (bubblin pretty good in less than 2 hrs after pitching my yeast and vigorous fermentation for over 24hrs). 

just had to share...

Ingredients / hemp

wondering if anyone has had any experience with recreational hemp, either in addition to or in lieu of hops.  i imagine it would require alot and would not be very cost efficient so i'm hoping to gain some wisdom from anyone who has traveled down that road with any success.
