Equipment and Software / 1/2 Barrel Kegs (X3)

So I have my 3, 1/2 barrel kegs ready...I just need some plans on how to make them into a functional brewery. I can look at pictures all day, but without blue prints, or seeing the system first hand it's too difficult to figure out how to build my brewery.

Anyone know where I to start? My main problem seems to be hooking up the piping in the correct order so it will function properly. I would also like to know the different electronic systems I can get that would keep track of temps, etc.

Basically I want to build my own Brutus 10, or Sabco system, and I'm looking for blue prints that are easily understood...

Can I add the priming sugar, then put it into a keg, and let it self carbonate in the keg?? Or does this only work in bottles, due to the amount of head space in the bottles?

General Homebrew Discussion / Small Boil Size

So I just did a batch of oatmeal stout, it is a partial mash. During the boil, I only had 2gallons in the kettle. After I sparged the grains, and put the wort in the primary, I added water to fill it up to 5 gallons.

What sort of issues do a small boil size create?

I also added the hops BEFORE the boil, and I didn't get a very good hot break. What will this cause?

Is this system worth $5000?? Comes with a 27gallon conical fermentor, a fridge that holds 9 kegs to ferment at cooler temps, and a ton of other stuff....

I would like to buy a system where I can heat, cool, ferment etc etc, all on one cart. Like the Sabco system. Something with fully automation....

What other companies offer something like this besides Sabco? I saw an ad recently about a similar system, it was cheaper then Sabco and the fermenters are conical. I can't remember who was offering it though....

So I'm going to be putting it in a 5gallon keg, going to pressurize at 20psi, and let it self carbonate. No priming sugar....

What is the purpose of fermenting in a secondary, and tertiary fermenter? Is it simple to filter the beer so there are not things floating around in the beer?

What is the best way/method to add cherries to my wort? I was thinking about crushing them, putting them in cheese cloth and letting them soak in the wort....But maybe someone with prior experience can give me some advice.

I've been hanging around a brewer at a brewery lately, and he's been helping me a lot. But I still have some questions about things he's told me, and just some general questions.

1) He said he ferments his ale's at 32F, so that when you pour the beer and the people drink it at higher then 32F you don't get precipitation. I'm trying to figure out how to clarify my beer, and I know I can use..."something"...I can't  recall the name of the product you can use in the kettle to coagulate the proteins so they sink to the bottom.

2) If you are making a 5 gallon batch of beer, how to you calculate how much water you should use? Or do you just start with 2 gallons, boil your wort, then add cool water to the wort until it reaches desired gravity/Plato? Where can I find a Plato meter to purchase online?

3) Plato vs. Gravity. Which is better, I'm told Plato is more like working with metric (ie: C), it is more precise then gravity.

4) How do I control the thickness of the head on the beer? I'm finding my beer's carbonation has big, round bubbles, and I would like finer bubbles, and a thicker head on the beer. How do I manipulate this?

Equipment and Software / Need Help Building Mini-Brewery

So after reading all the great articles in 'pimp my system', I'm wanting to start designing a mini brewery able to do 1 to 2 kegs at a time. I would like a false bottom mash tun, that I can vorloft (spelling is wrong) in. Then I want either to be able to heat the mash tun, so it's a kettle as well, or a separate pot that I can heat up with a digital thermometer. The last is I want 2 conical fermentors, so I can have 2 beers fermenting at once. If it's possible to get on a small scale, I would like some sort of a glycol system, or maybe I can just use water somehow. This means that I need some sort of a conical fermentor that has a jacket around the pot to pass cold water, or glycol around to cool it, with an automatic digital gauge. I also need pumps to move the liquid from one pot to another.

Any other things I need, or may want?

I want this mini system to be as close to what a large brewery does as possible, so I can practice for larger applications later on.

So I just made a dunkel wiezen from a kit, and I forgot to add the maltodextrin during the boil. I just put the beer in bottles, adn noticed I missed this step.

What is this going to effect?

Kegging and Bottling / Corny Keg's Leak

I just bought 2 - 5gal corny kegs, and it's the kind with the top with a latch. You pull a bar across and it pulls the lid up and is suppose to be tight, but I noticed when I was cleaning them I put them upside down and they are leaking every where. Maybe I bought ones that need to be reconditioned?
