All Things Food / Smoked Salmon Pairing?

I just recently gained a piece of home-smoked salmon filet. It looks fantastic. I love smoked salmon that
I have bought. I am so anxious to try it. But I ask this. Does anyone have a recommendation as to which
beer to pair with it? The one beer that comes to mind for me is Ft. Collins Brewing Z-lager. A smoked lager.

Anyone else have a suggestion? I'm in Denver so any locally available beer would be preferred but any suggestion
will be taken seriously.


Equipment and Software / Calibration brew for BeerSmith 2.0

So, with Beer smith I have begun to formulate some beers and I have noticed that there are
some significant discrepancies. Specifically I cannot find how to edit my mash volume and
how it translates to my boiloff volume. It assumes a larger boil volume starting point and
a significant boil-off.

No matter how hard I try cannot get it to my specs.

So, I am looking for a recipe that is known to reach temps, attenuate as expected, and
be a base line to get my equipment calibrated.

Any thoughts/help?

So I am sitting at home thinking back to this long 4 day weekend for me.
I worked 3 shifts a day on Thursday and Friday. The last one each day
was serving at the GABF...

Saturday I got to sleep in, then attend the GABF with a great pile of friends.

So here it is Sunday. My last day off. and I am tired. It has been a L  O  N  G  weekend.

I decided to have a beer. But then it hit me, if I could pick a beer to "Close the GABF weekend"
which one would it be?

I don't have a particular one, but am curious to see the answers.

To be fair I did have a Session Lager from Full Sail...

General Homebrew Discussion / I need help in Minneapolis/St. Paul

To the home brewers, in the twin cities area. I need help in the form of a CO2 system.
Specifically a small 5# tank and regulator to borrow for a "Welcome Home" Party for
one of our troops. A man, Kyle, just arrived home from deployment in the middle east
and his uncle Carlos told him before he left that he would brew some beer for his return.

Well he is back but Carlos is in Colorado, with access to the twin cities for his party but
would like to borrow a CO2 system to push the beer for the party. He has asked me to post
for him and he will chime in.

If anyone has access to a system we could borrow that would be super cool. He'd rather not
buy one in MSP due to the shipping and regulations with airlines and getting it back to Colorado.

It is a pin lock system, but he has extra gas-in pieces if it is a ball-lock system with threaded

I will be in Durango on the 8th. I hope to hit Ska brewing and Durango Brewing Co.
and possibly, Carver brewery, and Steamworks brewing...

Of course if anyone does meet up with me, it will limit my breweries as I figure a good
convo on beer will ensue and some food may be ordered but what the hell. I am up for
a good beer and good company any time.

Whadya say? Huh, Sean T, Jaybeerman, pinnah, and anyone else out west/southwest...??!?!?

PS. I know it is not an easy drive to Durango from, well anywhere in the region, But if you
had planned a trip there for something I figured I'd drop a line...

I should say WE won a silver medal.

Under the category of "Smoke Flavored and Wood Aged Beers"

Andy Hendreschke is the host to our 55 gallon Stranahan's Barrel
full of an imperial porter brewed by 7 brewers, 4 10-gallon batches
and two 5-gallon batches.

And if I may toot my own horn, I got a hold of 2 bottles. One I sampled
almost as soon as I got it home. The other I stored away in the fridge
and waited for a moment to share it with a fan of my hobby that was
being updated with everything since the purchase of the barrel.

The first bottle needed some time to mellow out, some strong flavors
left and right...the one I stashed away that sat for about a month
one of the smoothest tasting barrel aged beers. No harsh anything,
no strong anything. Just a balanced imperial porter with Stranahan's
notes in there. When I sampled it, I commented that it needs to go
into a comp. Little did I know it had! My comment was made on June
4th, the competition was a week later!

Been running almost constantly. I think is has kicked the bucket...

Does anyone have a way of checking if it is really shot?

No big loss other than time and work since it was a Craigslist find
I just cant stand to think I have to re-drill a door...Unless I happen
to find the exact sized fridge. I am keeping the door until I find a
replacement just in case... :-\
