All Grain Brewing / 1st All-Grain Batch

On Sunday we bottled our first batch of all-grain brew.  Up until now we have used Brewer's Best Kits.  For this recipe we used the Lonely Amarillo Pale Ale recipe from the March-April edition of Brew Your Own Magazine.  It looked, smelled and tasted great as we were bottling it.  We sampled the the beer we poured into the hydrometer tube.  It will be hard to wait two weeks for it to condition.

Equipment and Software / How do I cut a keg?

I am building my system.  I contacted a local brewery, and they gave me a damaged keg.  I intend to use it as a brew kettle.  It is an old style keg with a bung. 

To convert it to a kettle, I am going to cut an opening in the top and seal the bung.  Any suggestions on how I can cut the opening?  Dremel? blow torch?

Any advice will be greatly appreciated.


Extract/Partial Mash Brewing / Is old malt extract safe?

I found a beer making kit which I bought in 2003, but had forgotten about.  It contains the ingredients to make a gallon of beer. The malt extract is a 1.4lb can of Alexander's Kicker Pale Malt Extract and a 5g packet of Danstar Nottingham Brewing Yeast.

My question is whether it is safe to use these ingredients to make the batch of beer?  It seems like a waste to throw it out. ???
