This has probably been asked a million times and I'm hoping it's an easy answer as I'm new to Beersmith, but for the life of me I can't figure out how to add a malt that isn't preloaded into the Beersmith inventory.  (I'm trying to add Golden Promise as they don't have it on my version)

I'm sure I'm being dense and would love some help.  I've wasted way too many brain cells that I truly need on this one.

All Grain Brewing / Time Delay from Mash to Boil

Brewers,

Has anyone ever tried delaying the time between wort collection after a mash and the actual boil?  If so, what are the issues you've run into? 

I'm trying to economize the length of time on my brew days and am thinking of splitting the mash/wort collection and actual wort boil between two days; i.e. do my mash/wort collection at night, then let the wort sit in a covered brew pot and start the boil the next morning.

Anyone have any luck with this before?  How has this affected your beers?

Equipment and Software / Fixing a Deep Scratch in a Stainless Fermenter

Hi All,

I recently noticed that I have a moderately deep scratch about a half inch long in the interior of my stainless steel fermenter.  I'm concerned about the potential for bacteria/dirt/etc. to camp out in there and would like to find a way to grind it away or something similiar.  Has anyone attempted to fix a similar problem?  If so, what tools did you use?  How did you best smooth the surface so as not to make the problem worse with additional scratches in the metal?

Yeast and Fermentation / Bleach Solution added to Fermenter by Accident

Hello Brewers,

To make an entirely long story short, I had a mishap while dumping some spent yeast from my fermenter this weekend and inadvertently spilled about an ounce or two of my sterilization solution (bleach & water, 1TSP per gallon/H20) into my beer (five gallons of beer). I have a few questions:
1) Should I trash this brew?  Have I ruined the beer and would I potentially poison those that drink it based on the amount of bleach solution in my brew?
2) If I haven't ruined the beer by some miracle would this amount of solution inhibit the yeast during bottle conditioning?
