I'm making kimchi (using this recipe) and am having trouble coming to terms with the idea of leaving something with shrimp in it out on the counter to ferment. I assume the salt and lactic acid keep the pathogens from growing?

Does anyone have access to this new malt from Best?  I'd like to try some in a Dunkles Bock, but no domestic merchants seem to carry it.

I had a Hefeweizen with H2S and SO2 notes.  I was sure they would age out eventually, but I wanted to serve the beer next week.  Also, I didn't want to wait long given the style of beer.

Looking for ways to remove the sulfur, I came across this topic and decided to give it a try.  My approach was to dunk a piece of copper pipe into the keg about a dozen times.  It seems to have worked.  The H2S is completely gone.  I think I still detect a little SO2 in the aroma and the finish.

I had a feeling the lack of copper on the hot side of my brewery would bite me someday.  Looks like I need to toss that copper pipe in the boil from now on.

Mostly some crappy bottles of mead, but also the last bottle of a really good oatmeal stout.  Worst part has been cleanup.  The concrete floor is easy, but it went under all my refrigeration units.

What's the best kind of lighting to install in a brewery?  I'm considering a number of factors, including

  • - low UV emission to avoid skunking finished beer
  • - appropriate color temperature for observing beer when tasting
  • - low heat emission since I'll be working under them

I've found it hard to get the data above on various products, especially the spectral data.
