I was wondering if anyone has a good recipe for Goose Island x-mas ale.  It's one of my favorite christmas ales, and would really like a solid recipe to start from.

Going to brew my first cream ale this weekend.  Would like a critique of my planned recipe.

6.5 lb us 2-row
1lb us 6-row
1.5 lb flaked maize
1.5 lb minute rice
4 oz biscuit
4 oz honey
1oz Tettnang @ 60 min
1 pack US-05 yeast

90 min mash at 152
90 min boil

Beer Travel / Chicago beer spots

I'll be heading to chicago in a few weeks and was looking for some suggestions of good beer spots to go to.  I'm already planning on going to the Goose Island brewpub, but was looking for a few more good spots to check out while I'm there.

Kegging and Bottling / Force carbonation with beer gas

I just got my set up in to put my beers on beer gas.  I was wondering do I force carbonate with CO2 like I normally do and then serve with beer gas or do I force carb and serve with the beer gas and at what pressures?

Ingredients / Perle Hops

I have some Perle hops, but have never used this variety before.  Was thinking of doing a german pils using all Perle hops.  Just looking for some feedback on this hops and if they will be suitable for a pilsner?

Ingredients / Base malt for irish red ale

Would love some input on what base malt everybody pefers to  use for an Irish Red Ale.  I was thinking Maris Otter.

Other Fermentables / hydromel semi-sweet mead

I'm currently fermenting my 1st mead ever.  After one week my fermentation got stuck, so I racked to secondary and added more energizer and yeast nutrient.  I'm using wyeast sweat mead yeast.  Ever since racking it has been fermenting away.  It has been 2 months now and is still showing signs of fermentation.  What is the time table for a semi-sweet hydromel mead.  I was thinking that it should have been done by now.
