Depends on the yeast, 60 should be fine for almost any ale yeast.

How is the brewhouse efficiency only calculated at 35%? Something would have to go horribly, severely wrong to be that low.

How long are you waiting after reaching FG to keg/bottle? This could be part of the issue. Also, 68-70 is your ferm temp or that’s the ambient temp where the fermenter is kept?

We do quarterly club competitions. Styles chosen randomly.  We also get with a local brewery once a year and purchase unboiled wort, each brewer gets to do their own thing with it. Really fun event.
