Funny...I was going to ask about figs, too, and here's a thread all ready to go.

Anyway, Charlie, since you've done this before....
I have a fig tree in the backyard of the house I bought a year ago. I've been checking it every couple weeks or so, and it's now got hundreds of little green figs on it (bigger than marbles, smaller than ping-pong balls). They are all very hard and green still, so I've done some research on when I should pick them and think I'm ok there.
I, too, was thinking of blending them up, freezing them, and then adding them to the secondary (gonna make a porter - 5 gallons). Question is...Do I need to peel them? Does the skin add bitterness?
And hey, since you're the pro, any other advice would be great. This is my first time.

I went with not a  member, don't want to be, which isn't exactly accurate.  It depends on the day whether I would like to join a club or not.  I'm generally a loner with no need to "belong" to groups and such.  But some day I might choose to join one. 

Raising 4 kids and working for a company that considers 60 hours/week to be part time I've never had the spare time to spend in a club.  Like I say, someday.


This pretty much sums up my thoughts here too. I work a lot and have 2 little ones at home, so my brewing time is time to do my own thing alone. I also don't think there is a club in my vicinity. Just moved to my area about a  year ago. I've looked a little online and can't find one. Not a big deal.

Any of you ever blend yeast strains? I'm about to embark on my first experience doing this, albeit by complete accident.

Was making a yeast starter in prep for a Saturday brew day this weekend. And to make a long story short I accidentally grabbed jars of different yeasts and threw them into the starter wort before I noticed (yes, I know I could simply throw the starter out and start all over, but where's the fun in that?).

I store my yeast in small jars and grabbed three to throw in the starter. Thought I was grabbing three WLP001s, but, because I can't be bothered to read my own labels, ended up with one WLP001 and two WLP300s.

Anyway, the plan was to brew up a simple amber ale this weekend, but I do have stuff to make a blonde ale. So my questions....
1) Which beer should I brew with this yeast combo?
2) Do you think one yeast will dominate the other in the finished product?
3) I hadn't really thought too much about blending yeasts before.....Any recommendations on other combos?

The post boil chill is VERY important. Do whatever it takes for you to get the wort down to pitching temp (preferably as quickly as you can). I made a lot of brews where I could get the wort down to about 72-75 and no further unless I was willing to do the ice-bath thing for a few hours. So I either pitched into the low-70s wort (which resulted in so-so beer) or sat there nervously while the carboy sat in ice for a few hours. I've since gone with a second immersion chiller that I put in ice and am now able to get the wort down into the low 60s fairly easily before I pitch. And the beer seems to be much better for it.

I know your pain. I, too, have little ones, a job, and house/yard to take care of. Haha. Life!

Anyway, I've mashed overnight a couple times. Would probably save you at least an hour and a half on the other side. My not-so-scientific advice would be to start the mash a few degrees high because it's going to drop overnight more than you would ideally want. Not sure what your setup is, but if you mash in a cooler and wrap that in a few blankets, you can pull it off. Worked for me anyway.

Wow. Mostly surprisingly simple answers. :)
Looking forward to trying this. Until now I've just brewed whatever I felt like doing/drinking with a lot of hit and miss. Time to add some "science" to the mix.

Simple question here that I'm sure will not yield simple answers......

What style of beer would be best if you wanted to compare ale yeasts?

My plan would be to brew multiple 5-gallon batches keeping everything else as constant as possible and just changing out yeasts. I'm sure many have done this and just want some opinions on which style would best suit this kind of experiment.
