Thanks for the input. So my options are:
1. Do nothing
2. Gently empty into a bucket, sulfate, rack till it's clear

What would the downside be to doing nothing?  The mead has a nice clear color to it but it just has some sediment--white powder dusting the bottom of the bottle--a little pile maybe--size of a pea.

I started a peach ginger mead in Oct 2011.  I racked it into the secondary a month later.  I left it in the carboy to age and in May I sorbated it because I wanted to add some additional juice to bring up the peach flavor.  I added the juice in June.  I guess I should have looked more closely at the mead but I bottled it last week--July 15th. After awhile while bottling, I realized that there was a lot of sediment in the bottom of the carboy.  So I should have racked it again before  bottling--right?
So, now I can see that white sediment (yeast?) building up in the bottom of the bottles.  Can I dump the mead back into a carboy, rack, and bottle again?  I used flip top bottles so it wouldn't be hard to do that. What are my options?  Thx

I have a peach ginger mead in secondary about 5 months old.  It has a nice ginger taste/aroma to it but I wish the peach was stronger.  I think it isn't peachy tasting enough because I used cheap frozen peaches.

If I can find a good quality peach juice, can I add that it to kick up the taste?  And if so, when would I do that?

I have a bunch of sweet and tart oranges still on the tree (in so cal) that I would like to take advantage of.  I have 12 lbs of orange blossom honey.  I am a newbie. 

(I've made two meads so far--both Ken Schramm recipes--Fall Bounty Cyser--8 mo old--and Peach-Ginger---5 mo old--and both are still in secondary.)

Any suggestions for me?

I have a lot of persimmon that is ripening and I am hoping someone might have a recipe.  I could figure one out myself but that is risky-- and I am not sure what might enhance the taste--like cinnamon or an additional fruit?

Update--I actually left it in for about 15 days and I pulled it out today and the spice improved the flavor.  It tasted pretty good.  It is 2 months old.  Any ideas how much longer to age it?

Other Fermentables / Fresh or frozen peaches in a Ken Schramm recipe

I think I want to make Peach Ginger melomel.  The recipe is in Ken  Schramm's book and it calls for 10-12 lbs of fresh peaches.  Would it be ok to use frozen peaches instead?  If so, would the amount be the same?  Also, the recipe has the fruit put into the primary but if I use frozen would that change things?

I followed Ken Schramm's recipe for Fall's Bounty Cyser and I am now (cyser going into secondary) adding in the spice bag--1 tsp cinnamon, 1 tsp nutmeg, 3 cloves.  I doesn't say how long to leave it in.  I really don't have any idea how long to leave it in there.

I should have also mentioned that the cyser and melomel both fermented well--at least I saw lots of steady burps (too many to bother timing) and then they both gradually slowed down.

Ahh, I should have said that one burnt mead is 10 days old and is burping about 23 seconds apart--was every 10-12 last time I checked. 
I have a cyser still in primary after 5 weeks--burped 3 minutes apart. 
And a melomel in secondary about 10 weeks old--no action at all I think.
These are my first three meads.

Is it no burps in the airlock at all?  How long do I have to stare at it?  I have not checked the gravity yet but I plan to do so.

Thanks for the advice.  So I guess I'm heading to Toys R Us for marbles!  Although--could I just rack to several 1 gallon carboys or maybe a 3 gallon? 

I know I could just bottle but I'm trying to understand about the process. 

I have my carboys in the bilge of my liveaboard boat and it has a very steady temp of about 70 degrees.

I am wondering if I have too much head space going on.  My very first mead was in the primary on 6/22 racked off into a secondary carboy on 7/22 and it must be about 5 inches below (not the brim) the widest part where the neck begins.  Does that part have a name?  :D

I don't know how long I want to leave it before bottling.  I have 2 more to deal with soon--a cyser and a bochet in primary so
I need to figure out what I am doing.
