Ingredients / Re: cocoa nibs
« on: June 22, 2017, 09:54:15 AM »
I have recently been testing a product called Cholaca.  Pure organic cacao nibs emulsified with water  It's packagad sterile so you can add to taste after fermentation.  I found that it's not only delicious, it's way easier to use than nibs.
Denny, where are you getting yours? Their website says Whole Foods but I can't find it at my local WF.  How much in a 5 gal. batch do you reckon? I usually use 6oz./5 gal. of nibs for my Chocolate Milk Stout. I'd like to give this stuff a try.

The Pub / Re: Rebel Brewer Closing Retail and Warehouse

...For me, having Morebeer open a warehouse on the East Coast made it tough to order from anyone else. That was a savvy business move on their part, and I'm sure that set them apart from the other major online retailers for many homebrewers.
This. When I couldn't get it from my LHBS I used to use NB exclusively. Right before the Inbev deal, I tried Morebeer and have been using them ever since. I can order on a Wednesday and have it here in ATL by Friday. Just yesterday I got a NB catalog in the mail and for the first time ever, I tossed it in the recycling bin without even cracking it open. I try to use my favorite local, Operation Homebrew, as much as possible. But it's a traffic nightmare getting there from my house or from work. 22 miles from work and at least 45 mins. to get there.  >:(

7-21 days later (when fermentation and any associated cleanup is complete by the yeast), drop the temperature to somewhere between 30-40F for a few weeks.  [/quote]
I like to do a diacetyl rest before I drop the temp. Just raise the fermentation temperature from lager temperatures to ~68-70oF for a couple of days near the end of the fermentation.

I've used WLP830, WLP833, WLP820, WY2124, WY2206 and just recently, the Lager X. Hoever, I think I've decided to stick with the WY2206. It just "hits the spot" for me. I brew 10 gals. of an O'fest yearly and usually a Dunkel, German Pils or a Schwarzbier. It does well by me.

I bought casters for my brew stand from them. They have warhouses everywhere, so orders ship pretty quick.  They are like the McMaster-Carr of storage stuff. And their catalogs are like a small telephone book.

Hops Direct for large bulk (1lb.), Freshops for smaller amounts and the LHBS in a pinch. I have a freezer full o' hops right now, so no needs for quite awhile.  But based on what ya'll have posted, I'll check out YVH and HH next time the need arises.

I knew you were good for something!  Now to find some flavorfull decaf beans....

So, getting back to this...

My wife can only drink decaf and she lamented the flavors of all she tried vs. the real deal. Then about a year ago we spent a day in Athens, GA and had dinner at Five And Ten (excellent choice, BTW) and she was blown away by the decaf coffee they served. The waiter told us it was from Counter Culture Coffee in Durham, NC. It is their Slow Motion selection. We came home and immediately signed up to have it automatically delivered every month. I plan to get an extra bag soon to use in a coffee porter.

I've always just dropped them into the carboy loose.  No issues.

UPS.  Only have a problem once out of 30 shipments. FedEx is much more expensive.

I say whip it.
Whip it good.
For a minute or until you get it foamy.
I used to use a wine degasser and a drill to whip it. Whip it good.
Now, I use an aeration stone.

FWIW, Joe Buck will never be welcome in Cleveland  8)
Just curious: all of my freinds up in Chicago have this perception that Buck & Smoltz (mostly Buck) is favoring the Indians in their game calling/praise, etc. I'm not sure I buy into it. Are Indians fans complaining the other way - that they're favoring the Cubs?

Irish Red.  10 gals. Solid recipe that has done well for me in competition in the past. I haven't brewed it in a couple of years and my wife requested it.
