no rig yet, i lug keggles around, i use a KAB4 burning on the garage floor or driveway and have my MT on a sawhorse table.

quite a few Chicago Bars with decent brew and beer engines draw in the steam punk crowd.  You also get your grubby post hippie hippies and naturally just some people that like beer.

I peeped out your blog and saw "redneck tech"  That better describes my rig.  see also, neolithic braueri or crummy garage with beer brewing gear.

15-20 of us did Saisons for a possible upstart brewery.  We tasted 6 before and all had different yeast.

Condensed Opinion-Unless you are 100% locked on Dupont, then use 3711.

I did half my batch on 3711 and half on wlp550.  I no issues with stuck ferm.  I put a kg of jaggery in the end of the boil.  Had no trouble dropping from 1.060 to .0006 -dry.

My only "Do over" would be to not use any pellets as the 2nd carboy had some extra hopiness because i had a tough time with my pickup.

Robert, That is a great buildout!  I wouldn't mind seeing your "recipe" for that build.

Radioshack has some uber heavyduty 120volt 5 1/4" fans.  I have had one running for years to cool my computer since swambo likes form over function and had me put all the gobbligook in the pedistal of our desk.

They are like $22 but quiet and sturdy.

My question-

How long is the ferment on this yeast?  Since it is a big beer and there is Brett, I want to make sure it is done before I mess with it.

Don't sweat it!  The Keggle Skirt is about half an inch smaller than the KAB4.  Unless you plan to knock it over, you won't have trouble.  I also get the red hot skirt, but it isn't a major issue either.  Works great!

I have used this cooler with a braid for awhile now.  It hold heat well.

I do tip it.  The handle makes it pretty easy to tip even is you are solo sparging.  Mine sits on a sawhorse table that I attached a 2X4 cleat to so it won't roll off.  It works great.

That manifold is a slick build though.
