That has a bunch of bitting hops. I’m away from my software, but I would just use the Apollo at 60, move the Chinook to 0 or dry.

You know I start out to clone something every once in awhile, but it always ends up changing.  So I'm inspired by great beers. ;D

I make my own fermented hot sauce and can testify that they will spontaneously ferment on their own without any help.

What I do is rinse the peppers, roughly chop them and then puree in a blender with water and about 6% salt by weight. Makes a pepper slurry that will be fermenting within 24 hours at room temp. I do this in a loosely covered mason jar leaving some headspace for expansion. You may have to rap the fermenter on the counter to knock solids back into the liquid as they will be pushed upwards by the fermentation. Any mold that forms can be scraped/lifted away before packaging- I can assure you that this does not ruin the product.

After 30 days or so in primary I puree again with about half it's volume of vinegar added. Strain any bulky solids remaining, package and store at room temp forever if desired. It only gets better...

I'm printing this for future reference I don't have many peppers this year but plan on doing some next year.

It will actually be towards the end of next week but im going to be brewing up a wee heavy.  Just did a 80 shilling. I slimmed some kruasan off the top of that and have a starter going that I'm building up. I'm using east coast yeast  scottish heavy for these.

I may have too try this lots of orchards around me, my girlfriends dad has a couple.  Did you cut up the apples?

I have 5 apple and 2 pear trees that I just planted but it will be a couple years before I see any fruit from them.

I guess I'll pile on, too.  I'm an all grain brewer BECAUSE of Denny Conn.  I regularly sell the merits of the the Cheap-N-Easy method to newer brewers in our club, or brewers looking to move from extract to all grain.  I also often ask myself "what would Denny do?"  Maybe we need to make spiffy "WWDD" wristbands.  The hitch would be deciding what color they'd be.  Deep chocolate like BVIP?  "Waldo Lake" amber?  I think they'd better be "tie dye."  ;-)

I'm with the just dump it all in people.  Although you could wash it if the trub bothered you.  It seems like a extra step that isn't really necessary to me.

I think heady topper is cloudy just from the amount of hops they use and the lack of filtering.  I've used some conan that I harvested and the beer didn't come out any cloudier than my others.  Mine are all usually cloudy.

not sure if that helps, but that has been my experience.

I use a 40 quart igloo marine rectangular - with a slight adaptation of the Dennybraid (copper elbow with silicone sleeve and SS dryer lint filter) -  but I made one drastic move to improve my efficiency - my cooler is WHITE!!!  (I know - sacrilege).  I hope my Bo Pils turns out okay.  ;)

Apparently you didn't enjoy the sack of grain that magically appeared in your blue cooler every 4 or 5 brews.  :P

So can I spray paint my white cooler blue for the sack of grain? 8) :P

I use a rectangle igloo qt igloo for 10 - 15 gal batches.

I found a 120 qt igloo rectangle cooler on amazon for around $60, earlier this year when I went to bigger batches.  I made a PVC manifold for it.  Before that I used a 48 qt coleman that I found for $20.

Great hop, I've made a Ipa with mosiac, chinook, and cascade.  It came out great, one of my favorite beers.
