Thanks guys, I was worried about ending my first lager with burst bottles instead of good beer.  I thought the advice was a little odd, since the yeast strains didn't mention that (and you think they would have a vested interest in me buying more).

I have made my first lager, and I am about to bottle.  I brewed it December 18th, and racked the beer January 28th allowing for a Diacetyle rest.  Since then it has been stored at about 36 degrees.  I was wondering before I bottle, do I need a new batch of yeast to add for carbonation?  I have been finding conflicting accounts on the web, and well AHA hasn't given me bad advice yet.

I may shy away from dry hoping then this time around...it is my first lager after all and I had a hell of a time coming up with a pitching and primary fermentation temperature (so many sites with so many contradictory information). 

Thanks guys, I really have to say these message boards alone are worth the membership fee! Then toss in the magazine...

So I have an immersion wort chiller, and I've noticed a problem...my tap water does not really get colder then 76 degrees F.  Anything I can toy with to make this colder?  Its really not that cold...and its messing with my chilling....

So I could have sworn I cleaned out my equipment last brew well enough....but evidently not.  I broke out my gear to brew today, and sadly found black mold growing in my plastic tube!  I cannot get to the mold because of how far into the tube it is.  Right now I am soaking it in 5 gal. of water and 1.5 tsp of bleach.  I was wondering if anyone knows if this will work or if there is any other tricks.  I was going to try boiling it, but I'm worried about ruining the tube.  Right now my budget is a tad tight, and I really do not want to go out and buy a new tube if at all possible.

Jarrow...I'll have to keep that in mind.  I was afraid concentrate would ruin the flavor so I spent like $20 on this juice.

So I have gotten around to making this beer now.  I added 64 oz of pure pomegranate juice (not from concentrate).  Right now my secondary is bubbling like hell, so am I going to get more alcohol from this addition of juice?  Also if so, how can I tell my new abv since adding the pomegranate juice my SG did change (from a 1.018 to a 1.024)?

So I am making a batch of Rye ale, that I have made before where I soak it in a secondary fermenter with whiskey barrel chips.  I am a big fan of it, and its worked well when I soak it for about 17 days.  here is the issue now...I am making a batch for a friend, and I have to go out of town just before it hits the secondary fermenter, AND by the time I come back it will have soaked for 24 days.  Is this a bad idea?  Should I teach the friend how to bottle and have them do it while I am out?  Or should I just let it sit?

So I will be making an IPA recipe I found, and will need to dry hop for the first time.  The recipe says to keep the beer in a secondary fermenter for 2 weeks, but to dry hop for 4.  I will be using hop pellets (its the only one kind I have access to), do I just drop the pellets in for the last 4 days? Is it safe to open the air lock to do this?

Alright not a problem, but here is my next question: Sterilization...do I need to worry about sterilizing the juice and if so, how do I go about that?  Do I boil the juice?  I have only brewed with fruit once and it was pasteurized and canned.

Sadly I do not have the tub space (or the finances for ice) but I can try the wet t-shirt idea.  Right now my beer has gotten to 70 degrees.

Alright, I will give not racking it a try.  Right now my O.S.G. is at 1.066 so I am excited to see what it drops to.  Sadly I do not have a way to keep it at 64...I do not have the space for a second fridge in my house just yet (its an eventual dream as I would love to try my hands at lager)
