Not saying I brew better beer than HFS, I definitely don't, but it shows how critical freshness is in pale ale/IPA and why we should buy our beer local instead of from California or Germany... unless you're a Californian or German.

I'm starting to think of brewing beer like I do baking chocolate chip cookies.  Have you ever purchased cookies from a store that taste as good as the ones just out of your own oven?

I feel a lot like you do.  I'm not going to claim my beer is better than most of the well-known brands you can buy.  And yet, I'd rather drink my own brew than 90% of what I can buy in bottles, and more than half of what I can get locally.   Most of this hobby is about keeping your stuff as clean and sanitary as you can manage, putting fresh, quality ingredients in, and giving your beer a stable and favorable environment in which to work.  Past that, just get out of the way.

To torture the cookie analogy, buy fresh butter and eggs.  Get chocolate chips that you like. Nuts or no nuts are a personal choice.   Set your oven temperature where it ought to be, and take the cookies out when they're just the way you like them.  Your friends will swoon, but it's mostly just paying attention.

I've seen marine SS develop surface rust when the steel that it was worked with transfer a surface layer of the tool steel to the part.  I've done it myself by working parts with a file.  In those cases, I just kept polishing away the surface rust as it appeared and after a few rounds of that the problem went away.

We need to know what "cold" means.  Many people would find 62 unbearably cold indoors but it would be perfect for US-05.

The nice thing about a cool environment is that for something on the order of $20 and some stuff you might be able to scavenge from your garage, you could set yourself up with an STC-1000 temperature controller and do a great job of keeping your fermentation in your yeast's sweet spot.

I hear ya! I might be friggin' DIY'ed out by the time I get this basement done, though!  :P  T

There's always that burnout to be factored in as well.  Sometimes it's nice to just write a check and have it done with.

Still, given the time, I'm rarely sorry I do things myself, as I usually feel like I'll take more care and get something  done right.   There are some things that are worth farming out to a pro, like open heart surgery or an automatic transmission rebuild.   Your keezer isn't on that level though, and given your chest thumping reference I suspect you'll get more satisfaction out of rolling your own.  I know I would.

In my opinion, I choose to build because either believe I will enjoy the process or end up with a better product than store-bought.  Or usually, both.  Isn't this what attracts people to homebrewing?

Yeah one feature I wish the lid had also was dual for thermowell.

What keeps you from drilling the hole you want?   That's what I was thinking I'd do but having one in your hands you might see something I don't.

This might seem like a dumb question, but it wasn't clear to me whether the inside of these amphora were glazed or not.   If glazed, I can't see how they would be much different than a glass carboy.   If not, i'd worry about the porosity. 

But this is still something I'd love to fool around with.

Just saw this article this morning.  It's about Benson Brewing of Omaha, which has begun riffing on the idea of using custom made clay amphora for fermentation and aging:

I use my mash tun as a container for an oxyclean soak for my bottles a couple of days before bottling, so it gets a good secondary cleaning for free.    On brew day it gets a blast with the hose, washed with a soapy sponge, and a rinse.   Being on the hot side, it doesn't need this level of attention, but I would never begrudge an extra 5 minutes to make sure something is whistle clean.

After building a stir plate, my first stir bar ended up in the bucket.  No problem, I thought, I knew it was clean and had been sanitized.   So bottling day came and went well, as did clean up.  And then after dinner I flipped on the garbage disposal and was met by quite a racket... stir bar #1, all beat to hell.

When I built my stir plate, I bought a package of 6 rare earth magnets, and now the little pill bottle with the remaining 5 lives in my brew-day box so it's easy to remember to use one to capture stir bar #2 before pitching.

Oh, and the beer was just fine.  As long as you cleaned and sanitized, you'll be fine.

To me it's watching my friends enjoy the product.  The look on their faces, the "whoa, you made this?"  I had a friend turn down a bottle of Deschutes Inversion when stopping by on Monday.  "Oh, I thought you had some more homebrew."
