Thanks All!  Brew day went great.  With 46lbs of grain I decided to split the mashing between two cool man 72 Qt extremes.  Several buddies showed up to either learn about brewing or help with the clean up.  All were rewarded with great grilled sausages made locally by http://www.primalcutsmeatmarket.com

Hit an OG of 1.090.  Used two different belgian yeasts and beginning fermentation at 68 degrees.  Any recommendations of when to raise the temp?

If I knew how to post pictures I would.  Thanks again.  I feels great to be back.

This will need to move to another forum I am sure but... I am back!  I have two 2L starters going with Wyeast 1214 and 1762... will be making a 10 gallon batch of Belgian Strong from "Brewing Classic Styles".  My first all grain (any brewing) since my cancer diagnosis and chemotherapy!!! If feels good.  Happy Thanksgiving all!

Will be doing Denny's Vanilla Bourbon Imperial Porter next month.  A local homebrew shop mentioned sanitizing the beans in grain alcohol.  Does anyone know if this is necessary?  Thanks.

Thanks, what do you think about adding the dark grains at the. End of the mash?  I batch sparge according to Denny's site.

Denny,

Will be doing this brew at the end of the month.  I forgot to ask, do you alter your water.  The water here in Bend is very soft.  Ca is 7, pH is 7.8.

Agreed Denny.  Again for clarification.  I have seen your recipe with either 1056 or the 1450 yeast.  Which do you prefer in your recipe.

Not hell bent Denny, I read several versions and given different advice (such as several versions with different yeast, the one guys telling me to ditch the brown malt etc).  I appreciate this forum and the opportunity to question what I am being advised.  I will be going with your recipe as stated above.

Denny, truly appreciate your input.  Listened to your interview on the Brewing Network (2006).  Wonderful.

I will reread the recipe and may find the need to repost a question or two.

Am planning on doing this recipe in September for a holiday time consumption.  I emailed this to a fellow brewer here in town that recommended changing the brown malt to black malt and adjusting otherwise for color.  He didn't expand on the topic so I am asking you for your opinion.  Thanks. (5 gallon batch size)

Went to a great Belgian Beer Tap House in Portland, OR last weekend called Bazi (http://bazipdx.com).  Incredible selection.

I loved the Green Flash and  Brasserie St. Feuillien collaboration.  Does anyone have a recipe for this?

Quick question,  I have a corny keg that is not holding its carbonation.  I now realize that I need to put some "petrol-gel" on the lid O ring. Is there an infection risk to release the pressure, taking the lid off, put the gel on the O ring and then recarbonating?
