Sorry, but that guy is a turd.  The best part about this hobby is experimentation and finding those ingredients/processes that make the best beer for YOUR taste.  Even in competitions beers win style categories using some non traditional ingredients.  I would have probably gotten into a bit of an argument at that store... ;)

Looks like you are off to a great start here!  I will echo what was stated above about categories.  Why not use the BJCP guidelines for style categories?  You could still keep the MISC category for those crazy concoctions that don't fit any particular style.  I think this would greatly help people who are searching for a specific recipe.

I'll be sure to upload some recipes soon.

IME dry hopping cold minimizes the vegetal/grassy flavors people associate with a longer dry hop.  I'm with Blatz, the hops don't come out until the keg is kicked.  The hop aroma stays with the beer until it's gone.

TJ also has a nice oatmeal stout that's brewed by Goose Island.

You guys crack me up about the commercial beer thing.  My fridge is always stocked with both homebrew and commercial beer.  I love trying all the new stuff coming out and I think it's important to support craft beer in general.  I especially try to hit all the local brewpubs at least once a month.

Right on!

I like all the suggestions but I'm concerned about the roasted barley.  I made 3 gallons of dry stout with half a pound and it wasn't quite roasty enough for me.  Also, I don't have any wheat malt on hand so that's out.

I wanted a hop schedule with some bite so that's why the Chinook are in there at 30 min.

I think I'm going to do something like this:

How about Midwest IPA's? lol...

3 Floyds makes some incredibly hoppy and delicious beers in Munster Indiana.  Dreadnaught on tap is something to die for.  Their distribution is very limited unfortunately.

Founders Double Trouble is no slouch for a midwest IPA either. 

I personally think fresh Hopslam is the best DIPA ever.
