high abv (8% or more) is the first thing to look at. a variety of styles do well when aged - barley wines, imperial stout, belgian dark strong, tripel, etc. hops don't fare well long term.Thanks a lot for the answers. Does one of you has a recipe of a beer that aged well for a so long time ? I never tried a barley wine, maybe it's the occasion. And, sure, a triple.
After looking at the Brulosopy experiment mentioned above the oxygen is definitely a culprit for the darker color. How/what do you do/use to add the CO2 into the fermenter? Any rather simple way to add CO2 to the bottles? Kegging would be much easier for that, and I plan on getting into that in the near future.
