My wheat beer had an original gravity of 1.053. So I was looking for an FG around 1.012ish. It ended up 1.009. Why did it ferment so far? Not that I am complaining I am just wondering what I did so I can duplicate or fail to duplicate at will. Was it something in the way I mashed it?

I read on another forum that you should always boil your wort 90 minutes. Is this really necessary or can I get by with bringing to a boil and going right into my 60 minute hop addition?

I read in "How to Brew" that getting air in the preboil wort can cause your beer to suffer oxidation. This does not make sense to me as it seems like the bubbles in the boil would do the same thing. Has anybody had any experience with this?

This weekend I am going to do my second all grain brew. Am using a simple recipe of 5 lbs two row, 5 lbs malted wheat, and a pound of rice hulls to prevent a stuck sparge. My question is when figuring 1.25 qts per pound do I count the pound of rice hulls? So take 11 pounds times 1.25 qts?
