This was our brew dawg, Wilbur.  He hung out with us every time we brewed.  One of his favorite things was to clean up the spilled grain from milling and licking up the wort that splashed out of the bucket from agitation.  Unfortunately we lost him to cancer a week ago. He did like his beer though and at the end, the only way we could get him to take his medicine was to mix it with a bit of beer.

Chris is a great brewer and a fun person to be around.  He is good in that he will compliment you on your beer if he likes it.

That's my guess, too.  Generally, the water is fairly soft and not noxious!

I'm lucky in that my well water is fantastic for both brewing and drinking.

Yeah Denny, the profile of your well is pretty ideal.  Our well water has very little of anything in it and I always felt that our beers were a bit harsh.  We started adjusting the water about a year ago and since then the beers have been much better.

We always make two batches at the same time.  My wife makes one while I make the other.  When she is not available to brew, I will make them both myself.  Occasionally I do get things mixed up, usually late hop additions.  We have a Y adapter on the water line so that we can run two chillers at the same time. That works fine.

This is a good sign of an infection.  It was a stored yeast sample that accidentally got left out of the fridge.  The same thing hit my pear cider when, due to a set of unfortunate circumstances, I had to neglect for a month.  It is probably acetobacter from fruit flies.

I "borrowed" an idea from Randy Mosher and have made a wee heavy with chanterelle mushrooms a couple times.  Absolutely delicious!

Denny's Wee Shroomy is delicious!
