General Homebrew Discussion / Blending. Again.

I have a bunch of Double-Bock that is far too sweet and not nearly bitter enough. It's not really drinkable if only one glass is enough, right? :( I've been blending this cloying nightmare with Miller Lite at 8:1 or 1/4 cup per 16oz can. I can't think of a blanker canvas...

Great taste. And less filling.

A nice passable amber lager with a light feel. Actually quite good.

Roughly estimating at the above ratio, I'll need a little over five hundred 16oz cans of Lite to get rid of the Double-Bock. Any ideas? I'm considering raising the bitterness somehow...

I should have bought the Shiner.

I'm extremely disappointed with my recent purchase of SABL. Instead of one metalicky beer I got six. Flavor was very muted and the beer seems weak in strength as well, cause I drank 5 with no problem on an empty stomach. Maybe the beer doesn't travel well to Texas but it used to be one of my faves even back to the early 90's. Over the last couple years I haven't been very happy with my purchases of SA products.

Anyone else experience this?

All Things Food / Beer Bread revisited

I'm back to making bread consistently. Once or twice a week. But I'm also quite lazy so making a poolish is by far too much trouble. All I'm doing now is substituting homebrew for the liquid component.

Voila! Real bread without the hassle.

Been using JC's french bread recipe but doing it loaf-style:

This evening it'll be french butter, cheddar and chorizo. In the am peanut butter and honey sandwiches. Tomorrow evening grilled cheese. The next day bruschetta for dunking in soup. Croutons the next etc...

I don't leave anything for the birds.

As I was landing in Houston and turned on my phone a message popped up that my connection to DC had been cancelled. Scared of a little snow are we? Anyway II'm flying back home to try again tomorrow.  And this terminal has a crap beer selection. Sam Adams cold- snap? I don't care for it at all!

the other day at the LHBS.

The book rack had about 4 times as many copies of Papazian's The Complete Joy of Homebrewing as Palmer's How to Brew!

I asked the LHBS dude if they sold more of Papazian's book- and he told me they sold far more copies than HTB. This surprised me as my assumption was that it went the other way.

Almost bought a 3rd edition; wish my old dog-eared copy from 1993 hadn't been sold back in 2002. Think I might have got 20 cents at Half-Price Books for it. Some interesting recipes in the 1st edition that I'd like to try that don't appear to be in the third.

It has been bitterly cold by our reckoning. Yesterday it hung around 31* most of the day got colder and it never got over 36*. Breezy too. I had a fresh keg of ale all carbed up that needed chilling and crashing perhaps.

So I put it on the back step around noon yesterday...

And I just put a very cold but not frozen keg of beer in the kegorator this evening after work...

One of the best strong beers I've had. Ever. Not syrupy, alcoholic, overly sweet or ridiculously hopped. An amber hazy beer in perfect balance and harmony despite it being over 10% abv. The body is light and effervescent, the malt tones honeyed with notes of dark cocoa. Bitter without much aroma. Alcohol bitterness present but cloying alcoholic character is absent. Some phenols- hints of bandaid but not offensively so.

Been eying it for years but was afraid it would be a waste of my money.

It seems to me that lager yeast tends towards a higher turbidity and stays in suspension for quite some time if disturbed during racking.

Am I correct in my assumption based on my observations?

This sucker even works with my lubuntu chrome . Flawless with my chromebook. Even my android phone.

Revolutionary. Content shows on my widescreen HD or whatever the browser has in it. There's some lag that way but for youtube and netflix which are prime services the experience is amazing. I think the introduction has been as influential as my first experience with MTV. But on steroids. Or crack...

I goes into the closest SPEC's and ask for an entry-level whiskey. Walked out with some G. Dickle 8 classic recipe...

Is sour mash really an entry level whiskey? I was thinking of Canadian Club. Hell I could have picked Crown Royal.

Anyway I'm trying it straight. And indeed it is whiskey. I'm liking it. What should I buy next? For under $20.

Ingredients / Spices for a Witbier

I'm going to brew a Belgian style Witbier tomorrow and have a question about the various spices and their appropriate concentrations.

At the moment I have 1oz of Bitter orange peel (dried) and 2g of Paradise seed. That sound about right for 5 gallons? Also, while I am absolutely not a fan of coriander in a beer- about half an oz looks good.

Considering an addition of one or two dried chile de arbol towards the end of the boil.

How about you guys?

I brewed a batch of Hefeweizen a couple days ago... But hadn't brewed since my mother passed last October whereupon I brewed a bbl in her honor. Half was a Pale ale that turned out phenomenal and the other was a CAP. Unfortunately, the CAP turned out terrible (in my opinion). I was reminded with every glass- kinda broke my spirit I guess. :(

Anyway, even Dave sent me some Belma hops to brew with. I didn't. No gumption. And over half a year's time slipped away...

But I'm off my lazy ass and back in the saddle again! Tired of paying for expensive yet average beer I need to fill my two chest freezers with fermenters. So it is a Pale ale on Sunday! I'm gonna fill some kegs up and get ahead of the curve. ;D I really enjoyed brewing that Hefe- brought me back to the early 90's when I brewed my first.

Anyone else with similar experiences? How did you deal with them?

I'd only heard of the far off brewery Goose Island and never in my life thought it would ever be on the shelves here but lo and behold... ;D

I've had a 750 of "Sofie" farmhouse ale and am sipping on some "Summertime" which is a Kolsch evidently.

So far all have been excellent. Could it be that the recent appearance has anything to do with InBev?

Going Pro / New Texas law?

Today a person I met in New Braunfels claimed that a law allowing self distribution by breweries was passed recently. A google search reveals nothing.

Might affect my choice of retirement career options. :D
