More important is how it tastes. Smells during fermentation aren't very indicative of a final product usually.

I haven't seen foam yet with my ciders but haven't ever used "fresh" apple juice as it is unavailable. Pectin and particulate may be a source of krausen WAG.

I got a huge cider krausen this time that refused to drop until the fermenter was cold-crashed. The yeast was US-05. I'll rack tomorrow most likely and take it as a good sign..

Nitro isn't some sort of silver bullet for any beer. The marketeers have been at it again.

I wish I had read this thread before buying. Tastes like unbalanced homebrew: too roastily bitter compounded by hop bitterness. The nitro is actually a detriment because this IPA probably would taste better with co2. And it goes flat almost immediately which is like tripping a thief on the run.

So I expect the Samuel Adams "Nitros" will be as equally bad.

Usually us-05 or Windsor. Windsor leaves it a bit sweeter. I like bottled cider on the dry side but have been known to back-sweeten in the keg if it's being chilled. Otherwise I don't mess too much with my ciders.

I always have believed that in part this dark layer is hop isomer residue and well worth getting rid of if one re-pitches.

I had a hard time this year with a drought and pests. So dry weeds really weren't an issue but I'm putting down a barrier this spring and hopefully a proper drip system. It was a real PITA watering twice a day and leaving for more than one day was risky.
