I've rolled them up. Got two dozen. These things are crazy easy to make. Will steam for at least an hour then check if done.

It should occur about 0015 Central. Sky is clear and moon is full. Forecast is for fog but I'm optimistic for a nice viewing.

All Things Food / Tamales

It's the holiday season. People around these parts make tamales. Today I'm doing pork and will present them to the critics at our xmas dinner.

More to follow!

The Pub / Re: Egg Nog Recipes ?

I had a bad experience in high-school and eggnog is unfortunately deeply associated. It pains me because I used to enjoy it. Regardless, if memory serves me right eggnog should be a lighter bodied drink and not like the disgusting viscous commercial examples usually available.

I guess I have the German version. Utterly enjoying one right now. I'm getting passion-fruit. At 8.2% the alcohol is barely noticeable. This could be some exotic fruit drink.

If you use the aerator then yes- you must run your wort through 3/8" tubing. Myself? I usually just use a strainer.

I used the washing machine then transitioned to the dryer. Now I use 4 kegs to support my mash tun. I guess it's a 2-tier system. And I didn't get a pump until a few months ago. It was all gravity driven and bucket oriented.

Anything to get the tun above the bucket/vessel it's draining into. A kitchen counter for example. Otherwise some wood 2-by's to your own specs. Here's a pic from John Palmer's How To Brew that shows how simple it could be:

All Grain Brewing / Re: Testing Sample Malts

I've tended to get the "darker" fruit flavors primarily from those malts and the caramel hint only comes through after the conditioning process. But it may be you'll have to revert (settle?) to using 10L & 20L to get a bit more of that smooth caramel.

I was all electric with hot water heater elements until I started having problems with it. It was a cobbled together system and I never fully trusted it.

Leary of just the problems in all the prior posts I went with natural gas fired burners. Never run out in the middle of the boil. I'm sure the BTU's generated are much less. I can tell when it's been a brew intense month when I look at the bill!

I have the 2.5g Ariston under my kitchen sink. Love it!
