Has anyone seen a general review/comparison of the various homebrew pumps available now? I am particularly interested in flow rate comparisons.

Beer Recipes / Sierra Nevada Celebration

This is the grain bill from the Celebration clone recipe in the July/August 2017 Zymurgy issue.

12 lb. (5.44 kg) UK pale malt
1 lb. (0.45 kg) 60° L crystal malt
8 oz. (227 g) 80° L crystal malt
8 oz. (227 g) dextrin malt
2 oz. (57 g) chocolate malt

I plan to bump the recipe up to 11 gallons and am thinking the following:

- I don't see any reason for dextrin malt in the recipe so I will leave it out. With the specialty grains and starting OG I think this beer will have plenty of mouthfeel.

- 2 lbs of crystal 60 and 1 lb of crystal 80 seem like WAY too much so I think I will go with 1.5 lbs of crystal 60 and stay at .5 lb of crystal 80

- I think I will stay with only 2 oz of chocolate malt for 11 gallons unless the color doesn't seem red enough and then I will cold steep the other 2 oz and strain into the boil

Thoughts ?

I want to add some freshly ground black pepper to my next Saison. Grain bill is as follows:

For 10 gallons

1 lb malted Wheat
2 lbs Vienna malt
17 lbs Pilsner malt
1 lb beet sugar

So how much black pepper should I add for a subtle contribution? Planning on adding it at knockout.

Does anyone have a good Double Bastard clone all grain recipe? The interweb searching I have done hasn't revealed much reliable info.

I have gathered that it is 10 to 11% abv, probably has some special B, srm of about 14 (from looking at it) and probably uses Chinook or Centennial hops (maybe both).

Does anyone have more accurate info?


Kegging and Bottling / Clean your bottles !

I discovered last night during a bottling session that my previous routine of rinsing a bottle out after opening a beer is woefully inadequate. I started inspecting the bottles with a light and half of them were still very dirty. They had a film that covered the inside, a ring at the top, yeast spots, or all 3. Mind you I have been reusing these bottles for years and entering, and winning many competitions with beers in these bottles. I am surprised all the beers were not infected. Most of them were higher alcohol Belgian beers so maybe that helped keep infection down.

After coming to this revelation last night I proceeded to put hot PBW in each bottle, shake it vigorously, then clean it with a bottle brush before rinsing it and giving it a few sanitzer quirts (from my bottle tree attachment). So, at least the two batches of beer I bottled last night a were in nice clean bottles.  ;)

That got your attention? Supposedly that is the name of the 9 litre champagne bottle that I have and want to put some beer in. I have a way to get the cork in but the standard 750ml crown and cage is way to small it. Does anyone know where I can get the appropriately sized crown and cage?

Besides homebrewing, one of my other passions is Competition BBQ. My team, Smoke Therapy, has been selected as a finalist in the Tyson Best Wing on the Planet competition and the winner will be determined by a popular vote. Yeast and Fermentation / WLP 510 Bastogne Ale Yeast

Supposedly this is the Orval yeast without the Brett. However, I brewed a Belgian Blonde ale with it a couple months ago and tasted a bottle last night and it DEFINATELY has Brett. I know that White Labs has quality control out the wazoo (probably better than mine) but I am wondering if this one got past them. Has anyone else used this strain from them lately and gotten similar results? I don't particularly mind my results (I now have a great Orval clone) but I am glad I noticed this during fermentation and did not harvest and pitch this in my Belgian Golden Strong - as was my intention.
