Sierra Nevada just published what is to be a series of videos featuring Terrence Sullivan and Bill Manley about their new releases. As someone whose been the SN as a Beer Camp attendee it's very cool to see these two talking about beer again. Hope to see more of these as the seasonals roll out.

Ingredients / Water for a cream ale

I was hoping to get some feedback on my water and how I should adjust to a cream ale recipe. The cream ale will be pretty basic with two row as the base with a couple pounds of flaked maize and I'm going to add some munich for a little color and some body. My water is as follows:

Ca - 30
Mg - 8
Na- 13
SO4 - 31
Cl - 10
Bicarbonates (HCO3) - 106

I've used Bru'n Water and I got it to a point where the ph will be low enough but to do so I had to dilute 75% with RO and add 3.8 grams of SO4 to the mash and 3 grams to the sparge. And add 2.5 grams of CaCl2 to the mash and 2 grams to the sparge. This seems like quite a bit for just a cream ale that I've already diluted 75% with RO water. This also puts my RA way low, will that have any affect on the finished product?

This article makes the whole process seem kind of whimsical and the tasting notes are a little over the top in my opinion but it's nice to see beer making it in the dining/wine section of the New York Times.

Equipment and Software / Freezer Issue

This is not quite a beer related as I would like it to be but it is affecting my beer fridge so I think it fits in this category.

I'm having trouble with my chest freezer I use for actually freezing things. In the mean time I have UN-converted the other chest freezer that held my beer to an actual freezer until I get the other fixed.

My issue is this. After the freezer runs for a day or two it gets stuck around 15-20F. If I turn it off and let it set for an hour or so and turn it back on it cools right back down to -5 for the next day or two. Then it does the same thing and gets stuck at 15-20F. This is not good for the food in there so I switched it out.

I have noticed, by using an IR thermometer, that when it's stuck in this phase the back wall of the freezer (on the inside) is quite warm. It's in the 30's. The front wall is ice cold in the -10to -15F range. During this time the freezer is running non-stop and it seems to be fighting itself. When the freezer is working properly both walls are very cold.

2 days ago I put my love controller on it and set it at -5 and it's staying just fine. I'm wondering if the thermostat might be bad and after it runs for awhile it stops working. I don't know much about refrigeration systems and you guys are the smartest guys I know  8) so I thought I'd throw it out there.

The freezer is a GE and it's 10 years old.

The Pub / Whitehouse Honey Ale Petition

Not sure if anyone posted this anywhere and I swear it's not really political in nature. Someone started a petition on the petitions page of Whitehouse.gov to release the Honey Ale recipe they brew at the Whitehouse. I signed it just for fun. I think it would be cool to see possibly the President respond and release the recipe.

Equipment and Software / Chest Freezer/Keezer

Well my kegerator died on me last night. It was an upright fridge/freezer combo converted to hold corny kegs. I'd like to replace it with a chest freezer and temperature controller. I already have a love controller than I will be using but I'd like to know what size chest freezer would be best. I would like to fit at least 4 corny kegs on the floor with room on the compressor hump for CO2 and extra beer. I see some 7 cf ones out there for a decent price, would that work. I am going to visit the depots today and measure myself but I thought I'd get come opinions first.

I saw on the back of my BYO that 3726 is making a comeback in July. I'm so happy about this. I've been trying different saison yeasts in search of one that my wife really likes and I think this is the one. Do a little dance!

Yeast and Fermentation / Wyeast 2352 Munich Lager II

I see in the new zymurgy that Wyeast has an ad for their next wave of Private Collection strains. One catches my eye and that is Munich lager II- 2352. Anyone have any idea where this one came from? I have done a few google searches and board searches and it looks like this might be a new strain. I wonder what is different about this strain than its' cousin, Munich Lager-2308.
