Yeast and Fermentation / Re: US-05 at low temp
« on: July 03, 2013, 05:36:52 AM »
I've done US-05 down to 58 with no problems. Slightly slower than normal but still churns through. Some people may have gone lower but 58 is what I've done. I think it makes an incredibly clean beer at and under 60.

What I like about the checklist is that it provides a common vocabulary for all the judges, so it eliminates the vagaries of terminology.  I once read a scoresheet where the judge described a beer as "tanky".  WTF does that mean?  The checkboxes eliminate that, or at least cut it down since the judge would have to write that kind of comment separately.

For some reason I feel like I would describe you as "tanky".   ;)

Man, I haven't been this sick in years. Soar throat. Major lung congestion. High fever. Still haven't gotten better. Started feeling feverish before I left PA. Anyone else get sick? I keep going back to that glass washing station in Hospitality Room. Used it 2 or 3 times and then started having doubts about its sanitation.

I woke up Saturday morning with a really bad sore throat but I think it was because our room was very dry and I was yelling over the 102dB from the night before. I did not use the glass washing station in the Hospitality room.

I'm hoping the Michigan clubs do a nice job next year since most of them already have big setups built for our Michigan Homebrew Festival that we have done for the last 3 years. If power tools aren't allowed again we are going to have to rethink the setups though.

I'm pretty sure the brewing network did this. Not sure when it will be made available.

had mostly lost my voice by the end of Pro Night.  Then I had Moonlight's habanero mead which was tasty but pretty much the last thing my throat needed.  After the typical airport nonsense I finally made it home last night.  Sore, exhausted, but smiling.
I think I had a noise hangover from Pro-Brewers Night. My friend had a decibel app that he said was pretty accurate compared to a real one he has at work. It registered 102.

It was crazy loud. I woke up with a sore throat and no voice for most of the day.

No matter how many times I washed my hands I still picked up a cold! Dangit!!!

Me too....  Thanks again for the shirt!

I saw a Yellowhammer shirt at the John Mallet talk about malts, was that you or Keith? Dude try to volunteer to hand out beer. He was denied cause they knew he was going to take a pitcher and run.  ;)

Yeah, congrats! I'm more tired than anything. Had to go back to work to rest up  :D

I'm getting excited to actually meet you mooks face to face for the first time and enjoy tipping a few with ya!

For some reason, people are a lot less impressed after they actually meet me....;)

I can attest to that. Thought you would have a bandana on and a tie-dyed shirt.

Well it seemed to take a little longer than I expected but it finished down to 1.008. Had a krausen the entire time but was never extremely vigorous. It did finish in a week but based on what everyone else was saying I was expecting more like 3-4 days on a 1.056 beer.

So far the samples I have pulled have been fruity and tart dominate. I get some banana, little clove, tropical, citrus notes. I used a small amount of amarillo hops in this beer so some of the citrus could be from that. I have also zested 2 grapefruits and put the skins in the beer and am letting them sit until Friday then I'll keg it. So far seems like a winner.

As we get closer I'm still trying to decide what to do. It looks like most of the garages within walking distance are $30-$35 a day. Is that what everyone else is seeing. When I was in San Francisco a couple years ago I was able to pay ahead of time across from the hotel to get a nice discount. Anything like that out in Philly?
