All Things Food / got Paella?

Hey, there's nothing better thant making a paella (rice cooked in a pan called paella) with a glass of sangria, wine or a homebrew.... specially the last one

im a paella fan and i also make it for catering when my friends told me to do it...
we got a Paella contest and this photo is last years paella and wine festival in Tijuana!!
ill be posting my recipe soon, this year i took my Weizen to the festival... it suppost to be just a Wine not beer but,, i was proud to share my homebrews with my family and friends.

Yesterday i make a Witbier batch and i use SafT58, and i after put the airlock in the fermentor and begun the cleaning process of my kitchen i looked the empty pack of the yeas and saw: 012010!!!!?????
it make me nervous!, is that the overdue? best after these date?
usually i re hidrate the yeast in pre boil water at 38Celsius before pitching and wait for about of an hour,
in that time a notice a bubbling and a great sedimentation en in the glass.

i purchase yesterday the whole ingredients en Ballast Point.....
im concern, any comments?

Yeast and Fermentation / Safbrew T58 will turn good for a witbier?

Im planning tomorrow make my first Witbier, i used dry yeast but i dont know if SFT58 it a good choice considering that propertie of spicy and high ester flavor. i dont want overpowering this flavor

maybe 50% white wheat , 40% pale malt,riche hulls and maybe some oats
coriander, orange peel
has anywone tried this one? or pick S06?

All Grain Brewing / HomeBrewer from Tijuana Mx, already addicted

I started 6 months ago in this fascinating hobbie of Brewing.
I don't know how the hell its keeping my mind almost every hour at work, home, while driving, before sleep!! damn!

last saturday i was making my first kind of IPA from leftovers hops: Liberty, Saaz, Hallertauer and Magnun
5 pounds of 2 Row,
5 pounds of Pilsner mal
1 pound Biscuit malt
Safale 04 (very aggresive!)
65 IBU's aproximate

Excelent attenuation, in six hours it was already messy,sticky floor, airlock at 3 feet side of the fermenter (boom!) well i hope i did't have an infection for this, meanwhile.. i'll wait for good results

I begun with 3 batches from extract, 1 partial grain and i have 3 batches being All Grainer...
I will like to share some pictures and stuff with you...
