I won 4 cans in a raffle.  I saw zero difference in performance between Fast Pitch and my DME method.   Very quick and easy.

Did you mix it with tap water, bottled water, distilled water?

I used carbon filtered water.

The short answer is...when it has reached the desired taste level.  Every batch of fruit is different and will require a different contact time.   I know this sounds dismissive, but there is no exact answer.   Fortunately, mead is quite forgiving and will hold up to numerous samplings and additions.   I have a lime mead that I added lime juice to 5 different times.  I kept tasting it and adjusting as I went.  BTW..this mead is going to second round of NHC so I'll stand by this method.

Put your one pound in.....in a week or so, try a sample.  If it's to your liking stop there.  If you think it needs more fruit character, repeat until it does.

You need a fairly sweet mead to balance the acidity of the limes.  I used juice squeezed from limes added to the secondary.  Won BOS at Kansas City and 2nd BOS in Milwaukee.  It cleared to brilliant using SuperKleer.

Fresh squeezed lime into the secondary.  Add to taste.  It's better to start with a sweeter base mead as the acidity of the limes will dry out the perception.

Just start going to Beer Festivals and volunteering at competitions.   Your glassware collection will grow by leaps and bounds.  We have a rule at our house that if you come to drink....you can't leave unless you take a glass with you.

I'd give it more time.   I've found that when force carbonating meads and ciders, they take a bit longer than beer.  Don't throw in the towel just yet.

How long has it been sitting?   How warm?   

Try moving the bottles to a warmer spot and give it a few weeks.
