So is there any recipes that it is needed? what would the secondary do for it? When would I know to move it to the secondary? thanks a lot for the quick responses!

The only time I use a secondary is when I need to add something like fruit, or if I plan to reuse the yeast from primary and want to dry hop the first beer.  This way I don't have to wash the yeast.  If I'm not using the yeast again, I just dry hop in primary.

Is the carboy a 5 or 6 gallon?  You can use the carboy for fermenting but if it's 5 gallon, your batch size will be reduced to about 4 gallons.  With a 6 gallon carboy (like a better bottle ) you can get 5 gallons if you use fermcap-s antifoam or attach a blowoff tube.

Most likely the kit has the plastic carboy for doing a secondary, which most here will probably say is not necessary most of the time.  Do your primary fermentation in the bucket, then rack (transfer) your beer to the bottling bucket with your priming sugar and bottle.

Yeast and Fermentation / First Lager Starter

I have my first ever lager starter going at room temp in preparation for a Munich Helles next weekend.  The yeast is WLP830.  I want to crash it and step it up once more before next weekend.

Is there any special consideration when cold crashing a lager starter, since they like to ferment at colder temperatures?  Or is it not a problem since all the sugars should be gone from growing the yeast in the first place?

I don't want to screw this up since the yeast cake is going to be repitched into the next beer, a Maibock.

Not an expert but mine is usually at it's final reading in about 30-45 seconds, but then mine is el cheapo Milwaukee PH600 ( the yellow one ).

Not this last time they didn't.  ;)  I know they were down 21-0, but outscoring your opponent 49-0 in 3 quarters says something about a team.

Of course they could be 1-15, an no one will change my mind that they are best team!!

Think the Pats will finally get over their fear of winning a playoff game this year?  Or will the curse of the helmet catch continue?

The only team in the AFC I would be worried about is the Ravens.  But since they are the number 2 ( tee hee ), they wouldn't see them until the AFC Championship game in Foxboro.  So yes, I think they will get over their "fear" and win their first game.  Then continue on to win the AFC, then the Superbowl.

I would like to see the Patriots vs the Packers, and get some payback for Superbowl XXXI.

Comcast predicts the Jets will play the Pats on 1/15, and Green Bay will play Atlanta on 1/14.  Also the Ravens play the Chiefs on 1/8.

I think something may be wrong with the guide.
