If NB (who you ordered from) is 'Northern Brewer' then how did you pre-order?  I didn't see any such option & their site says they're out of Simcoe. 

I think the pre-orders are all done.  Brewmasters Warehouse had 1 lb wet Simcoe preorders through 8/10/11, although it looks like you can still order from them.

This was probably already covered ( I'm a few months behind on my reading ) but I would like to see an article on HERMS/RIMS systems and brewing with these systems.

Also, maybe a in depth article on the process of preparing a bid for hosting the NHC, followed by what needs to be done during the actual conference.

Water is a great idea.  I'm eagerly awaiting the water book by John Palmer and Colin Kaminski.

Why is rehydrating the dry yeast before pitching important?

Dry beer yeast needs to be reconstituted in a gentle way. During rehydration the cell membrane undergoes changes which can be lethal to yeast. In order to reconstitute the yeast as gently as possible (and minimize/avoid any damage) yeast producers developed specific rehydration procedures. Although most dry beer yeast will work if pitched directly into wort, it is recommended to follow the rehydration instructions to insure the optimum performance of the yeast.

Not sure I have any never again beers.  Well, not because it made me sick, but because it's gross: Sam Adam's Cherry Wheat.

lol - I swore this off back when I thought Corona was good beer.

Well it's definately not for everyone but when served on draft, the cherry is a little more subdued.
