i haven't brewed in a couple months and getting back to it today. i'm still roughing in my set up. my previous notes have my dead space at .50 gallon. after today i think i might be off. what are you guys calculating for dead space in this cooler?

angel city brewing( in los angeles brewed one and it sold out way faster than anticipated. last time i was in the tap room, i was told they were working on a second batch. people that have had it loved it. i have no idea what the recipe is though.

the french sip they brew would be aces with a turkey sandwich. angel city experiments a lot and i have not had a beer i didn't like outright. side note, i prefer this place to golden road brewing for those of you who may be visiting la soon.

just finished The Ocean At The End Of The Lane by neil gaiman.

A Hard Boiled Wonderland And The End Of The Word & A Wild Sheep Case by haruki murakami are both great if you are looking for something different.

currently reading both The Devil & Sherlock Holmes by david grann(a collection of his new yorker non fiction stories. fantastic so far) and Gone Girl by gillian flynn(a suspense tale that david fincher will use for his next feature).

so i brewed two days ago. ground water wouldn't get me to pitching temps, which is fine as i planned on letting wort chill the rest of the way in the ferm chamber anyway. and i did.

i rehydrated yeast yesterday and nothing was happening after 24 hours+.

today i sprinkled another pack of us05 into the wort and have very good things going on now.

i rehydrated the yeast at 105. followed reliable directions for it and still had nothing. it's an american wheat similar to gumballhead(which i've never actually had). within a few hours of pitching dry yeast today, fermentation is taking off.

i guess my question is, did i do the right thing? i've never rehydrated yeast before. i usually use wyeast 1056 and make a starter, but was a little confused as to why fermentation didn't take off with the rehydrated us05. brew day was off a little as i haven't brewed in a while but process was still pretty solid.

anybody toying around with this hop combo? have a few ounces of each on hand and was thinking about an end of summer ipa. haven't used a lot of citra so i'm not really sure what sort of ratio i should be thinking about. i made an all mosaic pale ale in the spring that i loved.

i just bottled my first go at it with mosaic.

it smells really nice and has a good flavor. but i'm not getting the blueberry some talk about(and not worried i'm not). i feel like it's more like slight watermelon or cherry. i bittered with some centennial and mixed all the late mosaic with a little amarillo. either i'm having a stroke or i figured out how to make a beer taste like watermelon/cherry. 

i like it and am very interested to see how it progresses with bottle conditioning.

anybody else have similar mosaic flavors/notes?
