Not sure I agree with this statement.  You boil Pils malt longer to drive off all of the DMS.  Once it's out, it's out.  It doesn't keep producing in perpetuity.

I typically just cover the hole with a rag soaked in StarSan.  Or leave my blow off tubes in the container under a soaked rag.

Doesn't matter.  The beer will equalize in less than 2 days.  I take the probe out of the styrofoam and go ambient so my freezer doesn't burn out.

I got a beer gun 4 or so years ago and haven't looked back. Easy to use and zero issues with infection.

Same here. That was a good investment.

Would the beer gun work with Sanke valves?  I have sixtels.

Never tried it with a Sanke.  I'd think as long as you use the Sanke connector/QDs that there wouldn't be a difference. Really all you're doing is sending the liquid out line to the beer gun instead of your tap.

I'm sure I can figure it out.  SOLD!!!!!

I am quite bummed as my Nut Brown Ale is probably my crown jewel brew.  I'd like to see it judged further than my friends killing the keg the day I put it on....

Just got my sheets.  Once again, the beers I filled off the tap got infected.  I guess I need to learn my lesson this time.  Two years in a row I lost 3 beers!   >:(

At least my Steam Beer got through which was the only one I bottled from the start.   :)

Hmmm... Time to check what you're doing when you bottle off the tap.  I sanitize EVERYTHING and use a new picnic tap if I'm bottling for competition.

I only spayed the Perlik inside and out with StarSan.  I need a better process for sure.  Next year I clean the lines and tap and flush with sanitizer.

My Steam Beer got through in Philly but my Nut Brown Ale did not.  Want to see that sheet to see if it was because I took it off the tap again and it got infected or if it was a judging preference. 

Very happy to have a dog in the hunt again though!!!!   ;D
