All Things Food / AHA Potluck dinner
« on: January 14, 2011, 02:54:07 AM »
Two dishes per person. One is too limiting and we all love to BBQ.  Gotta make enough to serve 12-15 people.
No throwdowns, if someone claims pickled turtle eggs you can't bring the same and try to out-do him.
Besides this is fantasy food... unless we all go to moonshiner's festival.

Be creative - I might bring meat jello just to show you all it can actually be pretty good. Gibanica and Burek would travel well. Pickled cabbage rolls could travel too if I vac packed em. I figured I'd stick to the Balkan stuff - no one's gonna claim that - so I don't have to pick now.  :P

OK OK - Cevaps (cevapcici) and pasulj. Final answer.

The Pub / Egg Nog Recipes ?
« on: December 21, 2010, 02:42:03 AM »
Anybody drink this stuff ?

2qts whole milk
1 pint 40% cream
1 dozen egg yolks  :o
2 pints bourbon
1/2 cup Jamaican Rum
1 cup brandy
1/2 lb powdered sugar
1/2 gal premium egg nog ice cream

Beat yolks and powdered sugar until creamy, blend in first rum, then milk and cream beating well after each addition.
Follow same procedure for bourbon and brandy, Chill.  Scoop ice cream into serving bowl and pour nog over ice cream, stirring to blend and chill.

This is from The Racquet Club Saint Louis.

Luckily, this is too far away from me, otherwise I might have started bidding.  But depending on how high it goes could be a heck of a deal.

The Pub / Pre Drink Rituals

In order to avoid getting drunk.... when you know saying no isn't really an option - What have you done?

Back in the day... I'd pull into dunkin donuts on the way to said event, half dozen doughnuts and an XL coffee.

Ingredients / Paying for hops is worth it !!!
« on: September 13, 2010, 12:27:18 AM »
I just spent 2.5 to 3 hours picking one set of hops.  :(
Five more varieties to go - I'm starting to think the prices out there aren't that bad.

I guess if the others harvest about the same, I will get about a 5 gallon bucket full of hops in total.
No clue what the weight of that comes out to.

Am I slow, too thorough, or is that about right?

The Pub / Scam auction site...
« on: September 11, 2010, 02:29:09 AM »
Maybe I'm just mad I didn't think of it first.

So you pay for your bids (.60 per bid) they are penny auctions, so conceivably you could get something for .61 plus shipping.
My last look was an apple laptop going for around $150. So that's a whopping 15000 pennies times 60 cents, then you owe the $150 anyway and shipping to top it off!

So at close (assuming $150) the company collects $9000 (from bids) + $150 & shipping from the lucky bidder.

Beauty here is - they don't even need to stock anything. After the stupid auction they can go anywhere online - pay full price and drop ship it to the bidders house.

Oh, the name of the place is Quibids.

Would you say the difference is simply the crust vs lack of one?

The Pub / Used to be good...
« on: August 10, 2010, 07:13:49 PM »
What beers have you had in the distant past that were good; but the accountants/CEOs got a hold of it?

Killian's Irish Red for me - I know the recipe has changed. It used to be good, now it is colored BMC.

All Grain Brewing / Starting the mash COLD ?
« on: August 09, 2010, 07:51:03 PM »
Ice cold tap water, I threw in the grains and have it coming up to holding temp. Does this change anything in the final product? I suppose it may depend how quickly I get the temp rise. It was done for no special reason on my part - I could just wait a while and I will find out I guess.

Edit: OK on the way up, the grain will trap heat and cause a BURP. I have maybe half a shot glass on the stove. No biggie.

The Pub / Pump safety...
« on: July 15, 2010, 05:55:37 PM »
So, I got a hold of a pump that I believe would be suitable for recirculating wort. Problem is, it's not NSF certified. The head is made of NORYL PPO and the impeller is made of VECTRA. Will I grow a third head or blow out my liver earlier than expected?

I called the company and the guy can't tell me to go ahead and use it anyway, but he basically did. Seems he was interested in the homebrew aspect and spent a good 15 minutes trying to find parts to help me convert this pump to "nsf".

So - Pump wort or just use this to power my carboy washer?
