Yes he is using amarillo

Sorry...I was basing this on the formerly published recipe from Vinnie. I think Amarillo will make for a better hop character anyway.

quite alright, don't even know when or why he changed it. Would love to hear about that. But I believe he was always using it in the Younger.  I was merely trying to compliment your tastes.

Yeast and Fermentation / Re: is this normal?
« on: May 17, 2012, 01:28:18 PM »
I used a wine thief to collect about 100ml of liquid, put in the hydrometer case (like every other reading i have taken). I spun the hydrometer a couple times to remove any O2. then released it and it sank, didn't float i repeated these steps a couple of times but with no luck.

My hydrometer will not float in 100ml, put in enough liquid until it floats. You can do this with the hydrometer in its case, you spin it to remove the bubbles that cling to the surface around the hydrometer so you can see the reading. Save your money for another fermentor.

I just kegged a DIPA with a blend of Columbus, Cenntenial, Simcoe and Amarillo hops.  I have to say that this might be my all-time favorite blend of hops.  :)

It'll be fine for all phases of fermentation, no need to transfer it. Yes it will take longer for the co2 to fill the headspace, but it will blanket the beer as normal.

Yeast and Fermentation / Re: Top Cropping
« on: May 16, 2012, 07:46:55 AM »
I have a beer that is actively fermenting with WLP007 and it at high krausen right now.  If I wanted to brew another beer and "top crop" the yeast, is it as simple as just skimming the krausen and adding it directly to the wort or do I need to make a starter with the cropped yeast?  Both would be 5 gal batches.

Yes, but you'll want to skim off the "dirty" top part of the krausen and discard it, then collect the creamy white goodness for your pitch-straight in with the appropiate amount.  Guesstimating how much is something to take note of and after a few times you'll get pretty accurate with how much you'll need. At high krausen I would not worry at all about less flocculant yeast, or any characteristic changes after one harvest. That seems to be about skimming the top of the yeast cake.
