The recipe is pretty basic:

3 pounds wheat extract
3 pounds briess malt extract
1 OZ German Hersbrucker Hops

And I made a starter from the yeast sediment in an Ommagang Wheat Ale bottle.

Hi,

The OG was 1.070 and has gone down to 1.050.  I was reading one of Greg Noonan's books last night and he mentioned the abreviation sp gr to be the correct way to abbreviate specific gravity when it is written with a decimal.

About how long should I let a beer ferment if I started at 1.070?

Hi all,

I started brewing a Wheat Ale Sunday and checked the sp gr last night.  It was still at 1.050.  Is that normal after only a couple of days of frementation?  Also the air lock is no longer bubbling and Krausen has occured and the yeast has flockulated and settled out.

Hi Garndt,

If I were you, I would not worry about the water at all.  I also live in Chicago and asked at the local homebrew store about making adjustments to the water chemistry and the guy helping me asked if the "water was good enough for Goose Island, why did I think it was not good enough for me". 

I have noticed that a change in fermentation temp can make a huge difference in the finished product.  If you want to start adding more controls to your process I would start there and get the most bang for your buck as they say.

Hi all,

Just wanted to let you know that Denny wrote a great article about creating homebrew recipies in the latest Zymergy.  Thank you Denny!!!  I enjoyed reading it and learned a lot.  I am deffinently going to start making teas out of grain and hops after this weeks trip to the LHBS.

I do have one question out there for all of you guys.  Denny was writing about a particular Porter he made and stated that the pH was low.  Does anyone know what the "notmal" pH range for beer is?
