Thanks I'm definitely going to give this a try.  I'm not scarred about taking a risk with flavors here.  I'll keep the board updated. I think I may change my direction with this. Thanks.

I think I'd go with a more tropical/fruity hop bill as erockrph suggested, even if you still want it to be black. Maybe try adding the Carafa Special at sparging to get less roasted character.

Modern Times has all their recipes on their website adjusted to 5 gallon home-brew batches.

There's not a lot going on there. You can check out Dragoon Brewing Company, that's a pretty good one, there's also Nimbus, Barrio, Thunder Canyon and Ten Fifty-Five. Thunder Canyon has a cool pub and restaurant in downtown which has a nice draft selection. There are also some pretty good bars, check out Tap&Bottle and 1702.

I'll be leaving town for a week in a couple days, and I have a one week old WY3711 starter in the fridge that I want to use before I go. Unfortunately, I just checked and I only have 2 lbs of 2-Row and no pilsner malt. And There's no LHBS here so I'd need to order by mail. :-[

I do have some other grains I can use, I have some Munich and Vienna (from Weyermann), some wheat and rye malts, flaked wheat, oats and corn, and some 6-row. I also have lots of specialty malts and A LOT of different hops. Any recommendations? Wait until I get back and buy some pilsner malt? :-\

This is for a 5 gallon batch.

I did this with Carared and some Caramunich 3. Not exactly red, sunlight helped a lot in this picture.

The HopLeaf was my favorite, the food is great and the beer selection is amazing.

Local Option has a really good beer selection that's always changing, but most of them are above 9% ABV, and its kind of a Rock/Metal atmosphere. They also make their own beer.

The food at Goose Island's brewpub is ok, but their beers are really good, they have some beers in there that you can't find anywhere else.

Monk's pub has a nice belgian beer selection, and the floor is covered with peanut shells, if you have peanuts you have to throw the shells in the floor too.

MapRoom, Hopleaf, Local Option, Haymarket, Revolution Brewing, Monk's Pub, Goosle Island, Bangers & Lace. The craft beer scene is pretty awesome there, those are the best ones I remember.

Thanks. I usually ferment in buckets so I can't see the krausen, but I had a phenolic infection from a scratched bucket last month and I've been a little paranoid since then. I guess I freaked out because of those big kinda-white bubbles. Good to know it looks normal.

I think that, much like a shark riding on an elephant's back, it is something to watch out for but not necessarily anything to worry about.
Yeah, but what if it was a shark with frickin' lasers?
Then simply watching out may not be enough.  You'd best wear your mirrored clothes to reflect the laser back into the elephant's eye so it goes stampeding off in the wrong direction and tramples the lion with the wolverine on its back.  Then you'll finally be safe.
