Beer Recipes / Over Hopped AIPA?

Just looking at the numbers, does this look horribly unbalanced, hop-wise?  In the vein of say SSOS, I don't think it is, but compared to what most people here brew, and like, what do you think?  Be merciless, please!

General Homebrew Discussion / Pediococcus...Diacetyl...Causes?

Is pediococcus a sanitation related issue, or something else?  Denny has told me that it can cause diacetyl.  I'm trying to eliminate possible causes as to diacetyl in a 1.051 APA, fermented with 1 packet of US-05 for 10 days at 66F.  I did not take a final hydro reading, assuming 10 days was ample enough time.

I must admit that I've gotten lazy, and have gotten in a dry yeast rut, in particular, overusing US-05.  For those of you who do well in comps, and are willing to sell the farm, what are your "go to" yeast strains for comp-quality APAs and AIPAs?  Just to be clear, I'm not interested so much in anyone's personal favorite strain, but what the comp people choose for comps.

Equipment and Software / Gas Line Lengths...Pressurization

I'll be installing my Perlicks, etc., in the fridge this weekend, and I think I have everything covered except to buy some gas line/hose today.

Do the hoses that will run from each valve of the 4-way manifold have to be the same length?  I'm guessing "no", but I want to make sure.  Obviously, two cornies will be right under the manifold (which I'm mounting on the inside wall), and two will be about 2FT away on the opposite side of the fridge. 

I will keep the CO2 tank outside the fridge.  I already have the main gas line/hose to go through the fridge wall.  Do I need some sort of gasket or grommet to run the line through in the fridge wall, or can I just drill a tight hole and call it good?  Options?

I received my 4 faucets, shanks, and accessories for my fridge conversion.  Now, I'd appreciate some advice or ideas as to where to place the 4-way manifold in the fridge.  The fridge's floor area is slightly over 4 square feet, and will hold 4 cornies fairly easily.  The CO2 tank will be on the outside.  Is it necessary to bolt/mount it on the inner fridge wall?  Is there a simpler way?  Thanks.

I really like the price and look of these faucets.  Has anyone here had any issues over extended time with flaking or tarnishing?

Is the brass finish only on the exterior?

Kegging and Bottling / 3 Valve Manifold...4 Kegs

Is there a way I could split one the gas lines from the manifold to accommodate two kegs?  Maybe there is some type of inline T-fitting?

So, I'm at the point to buy my 4 faucets for the fridge door, and I see that Perlicks are the most expensive of the bunch.  Why?  Do they have a longer lifespan under normal usage?  I'm trying to justify spending the additional money.

What are the issues, if any, with chrome faucets?

I'm also considering the faucets with a brass finish.  Will the chrome, and brass finishes flake?

In my last APA, and AIPA, I dry hopped with 2oz. of hop pellets.  The pellets were
divided into two sheer knee high pantyhose, and left to float for 2 weeks.  The problem I'm having is with a harsh, acrid sort of aftertaste.  Now, I'm wondering if
The pantyhose didn't sink to the bottom of the kegs, and were laying right where
the beer enters the diptube.  Any thoughts?

I'm looking for a thinner, red sauce that one could put in a squirt bottle, and leave in the fridge.  Not a fresh salsa, but something made from dried chiles, vinegar, spices...for tacos.

If you have a recipe that calls for 6-8 ounces of hops, and you use pellet hops, is the typical paint strainer bag an effective way to hold back the hop matter?

Will the pellets merely plug up the bag resulting in poor utilization?

What are the pro and cons?


Commercial Beer Reviews / Blind Pig

I'm sitting here drinking a bottle of Blind Pig, only the second I've ever had, and I'm asking myself, "Self, where the heck is the bitterness"?  It comes across like a big APA.  Good hop flavor, fair aroma, and zero bitterness.  Lately it seems I've been running into IPAs that have little to no bitterness.  Maybe my taster is off, but it seems to me that an IPA should be easily distinguished from an APA by its bitterness, not to mention increased gravity.  Give me SNCA or SSOS anyday.

The Timothy Taylor Landlord thread in the Commercial Beer Reviews subforum got me thinking about buying a few lbs of English hops.  The last time I purchased English whole hops from Hops Direct (years ago), they were cheesy, and unusable.

So, now I'm considering rolling the dice and buying some English pelletized hops.  Maybe they will be fresher?

Has anyone here recently purchased English hops, whole or pelletized from Hops Direct?  How was the quality?  Is there a better source for English hops?
