Ingredients / home grown cider

  i have only done a few at most. and they were basic, however, one of my colleagues has an orchard and an over abundance of apples.  he wants to try to make his own cider. both alcoholic and not alcoholic.  does anyone have any recommendations on shredding the apples, pressing etc?

i have been busier than a pig covered in s*** lately and i have been meaning to ask if anyone else has experienced this. 

two weeks ago i bottled a beer and the smell was like i had smoked a cigar the night before and was holding my sweatshirt up to my nose.

it was a 2 gallon batch, 22% pilsner, 72 % 2 row, 6 percent melanodan.  with just a little wheat thrown in.
14g hallertauer at 40 and 20 and 14 gm willamette at fwh.

i used the white yeast german lager x.

i am suspicious of a hot ferment but i have never had this smell/taste before.  2 -3 days in to my fermentation (50) i had a problem in my garage and had to tear out all my cabinets. the bucket was put in a corner of the garage and i forgot about it for about a week (80 ish) then took it inside (68-70) for about four more weeks before bottling.  i have fermented too warm in the past but i have not experienced this particular smell. 

do i just blame the process or has anyone else experienced this issue?

this was also in the sampling from the distributor. Although another big brewery product, i enjoyed this. poors dark at first but held up to the light there is a nice glimpse of red. clear.  roasted bitterness comes through in both the aroma and the aftertaste without any of the fruitiness that would come with bitterness from hops.  the foam was tan, and if there was any drawback, it was not thick or persistent.  FWIW, i think they did an okay job on this just like they did with Batch 19.

I just stumbled on about 6 hdpe buckets 3.5 gallons each (remember i brew small batches). however, they all had basalmic vinegars, and olive oils in them. i will probably start working on them later this week/weekend to clean them up, but curious if anyone has good recommendations for de smelling them.  if i can't get rid of the smell they will be used for other things, they were free, no big deal

dug this one out of the stack of beer i aquired.

this is one of the NB products i would buy again.  in the glass has a nice long lasting creamy head.  nice color but at first blush seems to not be clear. looking closer it is just the nucleate bubbles forming to maintain the persistent head.  the hop aroma is crisp and brief with the malt coming through more on the taste.  there is still a hint of medicine in the aroma but not on the flavor. it is not as pronounced a sensation as noted on the snow day offering i just had.  i enjoyed it. if between this and a batch 19 which is a cap and not so much the european pils, i would probably go for the batch 19.

not normally a fan of IPAs. I have been drinking quite a few though since buying the leftovers from a bar and having some given to me.  I found Henry Weinhard Woodland Pass IPA to be better than most.  Most of them taste like old strained asparagus to me. however i think the cascade hops in this seem to be crisper and more refreshing.  not as pungent in the aroma as most.  I could also still discern some malt flavor.

normally i brew small batches with all grain.  despite having made a heat exchanger from an immersion coil, i can generally just throw my kettle (4g) into the refrigerator.  then the next day dump in to my 2g fermentation bucket add yeast and go.  usually pour through a strainer that collects hops, hot break, cold break.

however, my brother gave me an extract  kit for 5g batch which i brewed yesterday.  i did the boil and added to my larger fermentation bucket with previously boiled and cooled water. thus i now have a bucket of wort with a nice layer of cold break.  i will be transferring this later today and adding yeast.  just found it impressive.

A friend closed their sport's bar not long ago. selling off their beer.  I at first just bought all the Argus, Rasputin, Red seal (love this stuff) and a Dirty bastard(really like, but i don't think it should be on the bjcp listas a good example) .  but after a few weeks they still had a bunch to unload.  i just bought another nearly 13 cases (okay a few are budwweiser) but the rest craft of one kind or another. so i say again, did i just have a good score or am i a glutton?

Don't get me wrong, i enjoyed this the other night. especially after i let it warm up for 20 minutes, but i have trouble believing this is close enough in style to be on the bjcp commercial examples.  the bottle says 50ibu, which is 40% more than the style guideline max.  and this, i think comes through in flavor and aroma. (granted some of the "flavor" may be from the wonderful 8.5% abv. but it is in a style that there is supposed to be little or no hop flavor or aroma.  the head was remarkably to style, tan but brief. and the color is quite appropriate. however, it is supposed to be clear.  i have had gravy that was less murky.

Stop cheering.  I have been putting up new vinyl siding.  i have a difficult spot to reach.  i have built the temporary scaffolding below and anchored it to the house.  i need to get to a second story soffit and then the freeze boards, fascia going up the roof line.  Tomorrow morning after rounds, and after i make sure my disability is current, I will put in the screw eyes for a safety harness, then proceed.  But if i am not back to finish this thread, well, drink one for me.

so i have a preliminary electric kettle made.  4 gallon kettle and 1500 watt element (will get bigger kettle and may go up to 2kw but keep in mind only brew 2g batches usually)  the kettle i got from good will for 2 bones.  just to test if i like the idea of electric.  anyhoo i cranked it up to see how fast it would heat and got stopped by storms after 10 minutes (chicago after all)  i checked the temp on 2g went from room temp to 110 in about 8 minutes.  questions then came up - can i stir this when in my boil, and can i hold a thermometer in it without getting killed while i am heating my strike water.  (i do plan eventually on a little automation)
