Equipment and Software / Wide tray for soaking in sanitizer

I thought there were wide (like 36") trays in Home Depot that i could use to soak the longer brewing stuff. But I can't find any. If you know what I'm talking about can you link to Home Depot or Lowes or Amazon for me?  :o

I'm in North Florida and have read that I should refrigerate my rhizomes during the winter.

1. When should I do this? The new hops book says they need 6 to 8 weeks below 40F.

2. Mine are in pots.  How much of each rhizome do I dig up?

3. Put them in a zip lock bag with moist paper towel, correct?

4. People say newly planted hops don't reach their peak until their second or third year. If I pull and refrigerate each winter won't they always be a like new hops and never improve their yield?

Yeast and Fermentation / Ideal temp for WLP051

The local shop was out of WLP001 so I grabbed 051 instead. A few Google searches later and it looks like this strain doesn't work well below 66F (one forum post claimed it stalls below that).

Does anyone here have first hand experience with this yeast?  Does pitching at 66F with a slow rise sound okay?

I broke my hydrometer yesterday and while searching for a replacement I saw this digital refractometer:

General Homebrew Discussion / My first dumped batch

Went to dry hop my beer the other night and noticed there were all these little white grains of something on the carboy. Looking closer I see they were moving.

maggots....

They were covering the carboy and had gotten up under the cap.

I think flies must have gotten into the freezer through the drain plug that I'd accidentally left out. It was a messy ferment that had spewed wort all over and I hadn't cleaned it up very well.

*sigh*

Just pisses me off. This was an IPA made with my home grown hops. *grr*

So now I have lots of cleaning and sanitizing to do...

Ingredients / IPA made with home grown hops

I have at least a pound each of Zeus and Cascade dried and vacuum sealed in the freezer. These came from the bines I planted last spring. It looks like I may be able to get a little more from the bines before the end of the season.

Since I've never used leaf hops before (only pellets) what are some things I need to consider when brewing with them?

I want to make a big ol' IPA with them.

Some of you will read this and go "duh!" but I figured I would post in case someone else made the same mistake.

When figuring out the amount of sugar to use for bottle conditioning I was calculating it based on the temperature it would be stored at after bottling (room temp) and not the temperature it was at the time of bottling.

I've been dropping the temp to clear the beer out so it was only up to around 40-50F by the time I was putting it in the bottles. This was giving me up to 1 more volume of CO2 that I wanted.

When preparing hop additions for a Pliny the Elder clone I accidentally added 3.5OZ Simcoe at 0 min instead of 2.5 oz Simcoe and 1 oz Centennial at 0 min.

Since the dry hops for this calls for 1oz of each Simcoe, Centennial, and CTZ should I add:
  • 0oz Simcoe, 2oz Centennial, 1oz CTZ
  • 1oz Simcoe, 2oz Centennial, 1oz CTZ
  • just 1 oz each like it says

Beer Travel / Best store in San Francisco to buy beer?

I don't have much time in SF but I want to grab some beer that I can't get here in Jacksonville, FL. Namely, Pliny The Elder and any Heretic beers.

Any suggestions where I can get the freshest bottles to pack in my checked luggage?

(seems to be the same as the one in Zymurgy)

Anyway, after reading several posts on water profiles for this beer I've come up with this (using RO water as a base so just ignore the "existing water profile" listed):


Going up to 300 or 350 ppm sulfate scared me.  :-[ But I read that the SO4/CL ratio for this beer should be really high, like 7.

I started with Tasty's profile and changed what I thought should change to bring sulfates down to 200 while keeping SO4/CL near 7.

Am I over thinking this? Should I just use his additions and not worry? When I first entered them the estimated mash ph was 5.1.
