With well modified malts I'm not sure a rest at 105 degrees is a good thing. A double decotition would probably be better.

For a five gallon batch I use 20-21LBS. Usualy end up at 9-10% abv.

I'll be keging my Bo-Pils on Sunday. Hopfully no issues. From everything I have read I should not be able to brew a pilsner with my well water. My pilsners are always good. My calcium is 19 however my Bicarbonate is 215. I do not treat my water with anything no matter what I brew.

I am drinking an Alt right now that I used 34/70. Tastes excellent! I will sprinkel 1 pack without rehydration without any fear. I have also fermented this yeast at 66 degrees. To my knowledge people on this site have said that this is the same strain as WLP830. If this is true why buy the liquid?

Let this beer sit at your fermentation temperature for 3 weeks then bottle. In another 8 weeks it will be drinking well.

Carbinate your keg to your desired level. Use your beer gun at 1.5-2 and you will be fine.

I brew with this yeast at least 3 times a year. I have only lagered once. Without doing a side by side I am not sure if it would make a big difference. I think you would be happy either way.
